The heartbeat of hospitality: Exploring kitchen roles at Accor

Step into an Accor kitchen and you’ll find more than sizzling pans and the aroma of fresh ingredients; you’ll find a high-energy environment built on teamwork, skill, and passion.

It’s where every role, no matter how big or small, plays a key part in delivering exceptional culinary experiences to guests around the world.

Here are some of the key roles that bring our kitchens to life:

  • Commis Chef — The perfect starting point, where you learn essential cooking techniques and gain hands-on experience with guidance from seasoned chefs. You’ll assist with food prep, maintain kitchen hygiene, and rotate through different sections to build a strong foundation in every aspect of the kitchen.
  • Chef de Partie — Take charge of a specific station, mastering your craft while contributing to the smooth running of service. From prepping dishes to mentoring junior team members, you'll ensure your station delivers consistent quality under pressure.
  • Sous Chef — Support the head chef by overseeing kitchen operations and leading your team to deliver excellence every day. You’ll manage inventory, coordinate service, handle training, and step in wherever needed to keep the kitchen running like clockwork.
  • Kitchen Porter — The backbone of the kitchen, ensuring cleanliness and organization, and supporting the whole team to keep things running smoothly. You’ll be responsible for washing dishes, sanitizing work areas, and assisting with basic food prep when required, keeping service efficient and safe.
  • Executive Chef — Lead the entire kitchen brigade, inspire innovation, and shape the culinary vision that defines the guest experience. You’ll create menus, manage budgets, mentor your team, and ensure the highest standards of food quality, presentation, and consistency across every dish.
