What does a Sous Chef do?

The Sous Chef assists the Kitchen Chef in coordinating teams and developing each team member to unleash their full potential. The sous chef leads by example, upholding the brand's guidelines, ensuring impeccable food presentation, and maintaining a professional personal appearance.

Food preparation and standards

  • Supervise and participate in the preparation and cooking of food items to ensure standards are met.

  • Ensure portion sizes, preparation methods, and garnishing meet the specified standards.

  • Maintain the quality and consistency of food production.

Food safety and hygiene

  • Ensure all food safety and sanitation standards are followed.

  • Maintain and clean kitchen equipment and work areas.

  • Report any incidents of food wastage and equipment deficiencies immediately.

Cost control and stock management

  • Manage stock to minimize waste and maximize quality.

  • Assist in budgetary and payroll expense control.

  • Monitor food storage areas to reduce spoilage.

Team collaboration and communication

  • Promote cooperation and teamwork within the kitchen and other departments.

  • Communicate effectively with senior managers and colleagues to ensure smooth operations.

Requirements needed for a Sous Chef job

To thrive as a Sous Chef at Accor, you'll need a mix of formal training and hands-on experience. 

Ideally, you should have completed formal culinary training or have equivalent experience, along with at least three years in a leadership role within a kitchen. 

You should have extensive knowledge of all culinary departments and be familiar with food safety and sanitation laws, staying current with the latest culinary trends and innovations. 

Flexibility is key, as you'll be working varied shifts, including weekends and public holidays, to meet the dynamic needs of our kitchen environment.
