
Exploring Chef careers at Accor: An interview with Ajay Bhikharie
Today, we had the pleasure of speaking with Ajay Bhikharie, a talented Chef at Novotel Rotterdam Brainpark in The Netherlands. Ajay's story is a testament to the growth and opportunities available within Accor, and we are excited to share his journey with you.
Can you start by telling us a bit about your background and how you began your career in hospitality?
"I started my career as a Steward while I was still in school. I needed a job to earn some money, and working in hospitality seemed like a good opportunity. After some time as a Steward, I applied for a job as a Chef.
I worked in that role for about three years before the Head Chef encouraged me to pursue a one-year degree course to improve my skills. I’ve been working as a Chef for six to eight years now, though I sometimes lose track of the time!"
How did the opportunity for further education come about, and how did it impact your career?
"The Head Chef saw potential in me and suggested that I take a one-year degree course to enhance my skills. This was an accelerated course, and it was a significant opportunity for me because I didn’t have the financial means to pursue it on my own.
Novotel invested in me, and I’m incredibly proud of earning my Chef’s degree. It was a pivotal moment in my career and allowed me to grow professionally."
Can you tell us more about your role as a Chef at Novotel and how you contribute to menu development?
"At Novotel, creating a new menu is a team effort. Each member gets a part of the menu to work on, and we collaborate closely throughout the process.
I particularly enjoy writing recipes and have developed a few for our current menu. For instance, I created the curries we serve. Working on new recipes and seeing them come to life on the menu is very rewarding."

What do you enjoy most about working in hospitality and being a Chef?
"What I love most about hospitality is the interaction with guests. We have an open kitchen at the front of the restaurant, which allows us to communicate directly with our guests. I enjoy seeing their reactions when they enjoy a dish I’ve prepared.
Making people happy with my food is incredibly fulfilling. I also cook for my colleagues, which helps create a positive work environment."

You mentioned that you left hospitality briefly and then returned. What brought you back, and what advice would you give to someone new in the industry?
"I left hospitality for a short period but quickly realized how much I missed it, especially the joy of cooking. It was an easy decision to return.
My advice to someone new in the industry is to find what you love to do, focus on that, and make it your own. Passion and dedication are key to success in this field."
