Job Description

  • 30 hours per week guaranteed
  • $31 to $32 per hour

Mercure Queenstown Resort is a beautifully appointed 4-star hotel nestled on the hills overlooking stunning Lake Wakatipu and the Remarkables mountain range. With three diverse food and beverage outlets – Rises Restaurant, South Eatery, and our Lounge Bar – we offer memorable experiences in a truly spectacular setting.

We are seeking two experienced and motivated Assistant Restaurant & Bar Managers to join our Food & Beverage leadership team at Mercure Queenstown Resort. In this role, you will work closely with the Food & Beverage Manager to oversee the day-to-day operations of our outlets, including Rises Restaurant, South Eatery Restaurant, Lounge Bar, Room Service, and Conferencing & Events.

This is a hands-on leadership role where you will be responsible for ensuring smooth service delivery, maintaining high standards of guest satisfaction, and supporting the financial and operational success of the Food & Beverage department.

About the Role

  • Provide leadership and operational coverage in the absence of the Food & Beverage Manager.
  • Oversee daily service operations across restaurants, bar, room service, and conferencing to deliver exceptional guest experiences.
  • Supervise, train, and coach Food & Beverage team members, ensuring service standards, presentation, and compliance are consistently met.
  • Assist with workforce planning including rosters, performance management, and recruitment.
  • Manage stock control, ordering, and cost management to achieve financial and operational targets.
  • Collaborate with the Culinary and Sales & Marketing teams to coordinate menus, promotions, and events.
  • Monitor guest feedback and implement service improvements.
  • Ensure compliance with licensing, health & safety, hygiene, and hotel brand standards.
  • Support financial performance by monitoring budgets, revenue, and cost efficiency.

Qualifications

About you

  • A minimum of 3 years previous experience in a supervisory or assistant management role within a hotel restaurant or a high volume hospitality environment. 
  • Strong leadership of restaurant, bar and event operations, licensing regulations and cost control. 
  • Confident leading a team in a fast-paced environment and ability to motivate and develop a diverse team.
  • Excellent leadership, organisational, interpersonal and communication skills. 
  • Ability to lead by example and create a positive, team-oriented work culture.
  • Ability to work flexible hours, including evening, weekends and public holidays. 
  • A valid LCQ certificate and Duty Manager Certificate (or willingness to obtain).
