- Transmitir o panorama geral do hotel (ocupação, principais clientes, eventos etc.) à equipe através de briefings e reuniões.
- Coordenar as atividades da área no seu turno de trabalho, orientando equipe, priorizando/distribuindo tarefas e solucionando os problemas operacionais pertinentes.
- Garantir a higienização das cozinhas no seu turno, restaurante de connectors, materiais, utensílios e equipamentos utilizados na preparação de alimentos em conformidade com a Vigilância Sanitária.
- Assegurar o cumprimento dos procedimentos de coleta seletiva e retirada do lixo das áreas de Alimentos e Bebidas e orientar os responsáveis pelo controle de pragas, conforme cronograma interno.
- Disponibilizar material operacional de A&B necessário à mise-en-place dos restaurantes, bem como acompanhar a montagem e desmontagem dos buffets.
- Requisitar a aprovar materiais e produtos necessários à higienização de cozinhas, refeitórios, buffets, utensílios e equipamentos.
- Acompanhar a realização do inventário de materiais operacionais de A&B.
- Controlar danos e reposição de materiais operacionais de A&B.
- Zelar pelas condições de funcionamento dos equipamentos da cozinha, solicitando os reparos/consertos necessários.
- Garantir o cumprimento das metas estabelecidas no contrato de gestão.
- Reportar qualquer situação considerada perigosa ou suspeita no hotel para superiores.
- Manter o Chef de Steward informado sobre as rotinas da área.
- Responder pela aplicação das orientações relativas a padrões operacionais e à sustentabilidade, seguindo as diretrizes corporativas, bem como promover a conscientização ambiental e social, por parte dos connectors da unidade.
- Supervisionar a utilização dos Equipamentos de Proteção Individual e Coletivo (EPI’s e EPC´s) obrigatórios para a execução das atividades do setor.
- Refletir as atitudes ideais do connector: “Eu conecto”, “Eu envolvo”, “Eu vou além” e “Eu personalizo” que são baseados nos valores AccorHotels.
