Job Description

Work with our team of Chefs creating world class dining experiences for our guests. This is your opportunity to work in a Kitchen committed to preparing and serving the finest meals. 

Competitive Salary: $92,000 - $95,000 gross annually, based on previous experience & education

  • Oversee all aspects of Garde Manger, event kitchens, Gold Floor food production, Afternoon Tea, and Banquet functions, ensuring consistency in food quality, cost control, and alignment with hotel and brand vision. Supervise chefs, schedule coverage for Pre-Cons, and liaise with key departments.
  • Actively train and mentor junior chefs and apprentices, supervise food preparation and presentation, foster teamwork across departments, and ensure proper staff development, scheduling, and morale.
  • Create, implement, and maintain standardized recipes and specifications to ensure consistency, high-quality food standards, and guest satisfaction. Oversee food safety, sanitation, and cleanliness of all kitchen areas.
  • Manage departmental payroll, daily food ordering, inventory control, and minimize food waste and overproduction through proper storage, rotation, and efficient production planning.
  • Conduct departmental meetings, support hotel committees (Health & Safety, Service Plus, Sustainability), and promote Fairmont’s mission, vision, and values while ensuring smooth communication within the culinary team and other hotel departments.

Qualifications

Your Skills & Qualifications:

  • Minimum 8 years of cooking experience, including experience in a large banquet kitchen.
  • Experience in a luxury hotel environment with high service standards.
  • Red Seal Certificate (Journeyman’s papers) or recognized international equivalent.
  • Proficient in both à la carte and high-volume production cooking.
  • Previous supervisory experience in a culinary setting.
  • Strong administrative skills including scheduling, payroll, and departmental management.
  • Working knowledge of Microsoft Office applications (Word, Excel, PowerPoint).
