Job Description

  • Kitchen Operations & Inventory Management
    Manage daily kitchen operations including market list planning, food stock control, and inventory tracking to ensure seamless workflow and prevent ingredient shortages.
  • Food Quality, Hygiene & Safety
    Ensure compliance with HACCP standards; monitor food quality, taste, and presentation; prevent contamination and ensure hygienic storage and equipment maintenance.
  • Cost Control & Menu Planning
    Monitor food costs to align with the budget, reduce waste through efficient planning, suggest new recipes or products, and collaborate with the Executive Chef on menu development and pricing.
  • Team Leadership & Supervision
    Lead, supervise, and mentor kitchen staff; assign tasks, uphold discipline and morale, and take full charge of operations in the absence of the Executive Chef.
  • Staff Development & Scheduling
    Recruit, evaluate, and train team members; conduct performance reviews, organize development-focused training programs, and prepare weekly staff schedules based on business needs.
  • Safety, Crisis & Sustainability Compliance
    Ensure adherence to safety protocols and emergency procedures, support sustainability initiatives (e.g., energy saving, waste sorting), and participate in crisis management and quality monitoring per Accor standards.

Qualifications

  • Minimum Primary school education
  • Additional certification(s) from a reputable Culinary school will be an advantage
  • Minimum 3 years of relevant experience in a similar capacity
  • Good reading, writing and oral proficiency in English language
  • Ability to speak other languages and basic understanding of local languages will be an advantage
