Apoyar al Executive Chef en la dirección, supervisión y coordinación integral de las operaciones culinarias del hotel, garantizando estándares de excelencia gastronómica, seguridad alimentaria y eficiencia operativa en las estaciones, contribuir a la satisfacción de los huéspedes y a la rentabilidad del hotel.
- Apoyar al Executive Chef en la gestión de todas las operaciones de cocina en los diferentes outlets.
Supervisar y capacitar a los miembros de la cocina, asegurando el cumplimiento de los estándares del hotel.
Monitorear la preparación y presentación de los alimentos para garantizar una calidad constante.
Participar en el desarrollo de menús y en la creación de nuevos conceptos culinarios.
Controlar los costos de alimentos mediante una gestión efectiva de inventarios y porciones.
Asegurar el cumplimiento de las normas de higiene, seguridad y limpieza (HACCP).
Asistir en la programación de turnos, evaluación del desempeño y organización de la cocina.
Coordinar con el equipo de banquetes y eventos para atender las actividades del hotel.
Fomentar un ambiente de trabajo positivo y productivo.
Mínimo 12 años de experiencia profesional en cocina, incluyendo al menos 4 años en una posición de liderazgo como Sous Chef.
Formación académica en gastronomía o carreras afines.
Se prefiere experiencia previa en hotel de lujo o restaurante de alta cocina.
Sólidos conocimientos de cocina internacional.
Capacidad comprobada para gestionar y desarrollar equipos de cocina.
Conocimiento de la gestión financiera de cocina, incluyendo control de costos de alimentos y desperdicios.
Conocimiento práctico de normativas de seguridad alimentaria y principios HACCP.
