The 25hours Hotel The Olympia is the first 25hours in Australia, located in the vibrant suburb of Paddington in Sydney. The building itself was formerly a popular cinema, which opened in 1911 and reflects its rich history throughout the guest experience.

The hotel has 109 rooms on six floors and will feature event and meeting areas, a Levantine restaurant, a street café, and a rooftop bar with a view of the Sydney City Skyline. A new era awaits at the 25hours Hotel The Olympia which will shape and transform Paddington, welcoming a vibrant and diverse team, bringing its vision to life.

Together with our General Manager, the Director of Operations is responsible for holding together all the threads of the operations and assisting the operational department heads so that they can ensure a perfect guest, bar or dining experience in all areas. Job Description

This is your daily contribution to turn our house into something special ...

 

  • Think out of the box and create pop up ideas with an ongoing edge for our food, retail, beverage & culinary operations, as well as work with our franchise partners in the hotel to create a new destination.
  • Captivate the team you manage with your understanding and commitment to our design, training, brand concept and roll out the Sop’s for our captivating food, beverage & culinary areas.
  • Hire, lead and mentor a diversified team with a “come as you are” mind set, leading by example and showing your passion, empathy and optimism in everything you do.
  • Rule the PNL. Understand what makes your operation tick and make ongoing adjustments to ensure performance on the bottom line.
  • Understand your business and manage expectations. Hotel guests, as well as our tribe of chefs, food & beverage and back of house teams are all at our hotel staying with us or working with us to experience a soulful experience and memories. Your mission is to make it happen!
  • We love crazy and nutty ideas - Partnerships and collaborations should be in your back pocket to activate ideas and initiatives throughout the hotel with our food & beverage suppliers, on brand companies, the local art scene and the surrounding community.
  • This is the no.2 position in the hotel and as such you will be the righthand of the general manager with a continuous team spirit and vibe to make things happen.

Qualifications

We are looking for you – with personality and that certain something:

  • Pre Opening experience would be an advantage with a good understanding of OS&E operations, design and construction, fit out and equipment testing.
  • A strong F&B background in a lifestyle hotel, or a similar background in a high end outsourced restaurants chain or F&B concept or similar would be advantageous
  • Culinary experts looking after large operations both in the kitchen and in the front of house will be considered
  • A crazy passion for food, beverage and an understanding of Sydney’s nightlife and concepts is a must!
