Job Description

In this role you will:

  • Prepare and present food items for a la carte, buffet, and pastry services to high standards
  • Mise-en-place & Service: Prepare all ingredients before service, ensuring the station is organized, stocked, and efficient.
  • Mixing, preparing and baking bread, pastries and other baked goods for café and Te Kaahu Restaurant services (breakfast, Lunch & Dinner)
  • Assist Executive Chef with menu preparation and ensuring adequate supplies are available for expected service.
  • Liaise with Restaurant team members regarding the availability of menu items, additions to the menu and any relevant changes.
  • Maintain excellent presentation standards and cost control for all food and beverage outlets.
  • Ensure cleanliness, safety, and organization of the kitchen at all times
  • Supervise kitchen operations in the absence of the Executive Chef and Sous Chefs
  • Collaborate with other departments to enhance the overall guest experience
  • Stay updated with the latest food trends and contribute creatively to menu development

Qualifications

  • Minimum 1 year’s experience in a 5 star hotel or equivalent, with hands-on pastry, cake, and bread experience (sourdough based, seasonal and cultural).
  • Strong mise‑en‑place and service skills; able to maintain an organized, fully stocked, and efficient pastry station
  • Sound knowledge of sourdough bread production, including fermentation methods and shaping techniques for various styles
  • Proven ability in viennoiserie dough preparation, including accurate lamination techniques
  • Experience preparing pastry components and fillings such as jams, crème pâtissière, caramel, and ricotta
  • Skilled in producing cakes, entremets, and café‑style baked goods to a high standard
  • Creative, passionate, and self‑motivated, with the ability to work independently during graveyard shifts
  • Flexible to work a range of shifts, including mornings, evenings, weekends, and public holidays
