Le Fairmont Monte Carlo est un hôtel de luxe situé au cœur de la Principauté de Monaco. Il est doté de 596 chambres, suites et résidences ainsi que de quatre restaurants, de trois bars, d’un Centre Fitness, d’un Spa, de deux piscines, d’un Room Service et d’un service Traiteur.
- Gérer le stock et les commandes de la nourriture pour son service en l’absence du Chef Pâtissier
- Confection de tartes, entremets, biscuits, chocolats et autres desserts
- Préparation des Banquets
- Préparation des desserts dans les restaurants
- Respecter les standards de la compagnie
- S’assure que tous les standards de l’hôtel sont adhérés
- Gère l’organisation du travail au sein de la pâtisserie en l’absence du Chef Pâtissier
- Contrôle de la propreté et du bon état du matériel de la pâtisserie en l’absence du Chef Pâtissier
- Suivi des normes d’hygiène et de la sécurité alimentaire et matériels
- Mener les briefings du service et informer les collègues des préparations spéciaux, changements, ruptures de stock etc. en l’absence du Chef Pâtissier
- Savoir faire des pièces décoratives en sucre, chocolat ou glace un plus
- Toutes autres tâches assignées par ses superviseurs
- Respect des normes HACCP
- 3 ans d’expériences significatives comme Chef de Partie Pâtisserie ou 2 années comme Sous Chef dans un établissement similaire
- CAP / BEP Pâtisserie ou Bac pro Pâtisserie
- 3 années d’expériences significatives au sein d’une brigade
- Disponible pour la bonne marche de son service
- Capacité de travailler en équipe
- Diplôme pâtisserie
- Capacité de gérer plusieurs demandes en même temps et de gérer les changements dernières minutes
- Indemnité de nourriture
