OBJETIVO PRINCIPAL DEL CARGO
Responsable de la gestión y organización de las actividades de Alimentos y Bebidas, cumpliendo los criterios de tiempo, coste y calidad de la marca, estimulando las ventas y aumentando los ingresos de A&B.
PRINCIPALES ATRIBUICIONES Y RESPONSABILIDADES
- Supervisar las actividades del área de Alimentos y Bebidas, orientando, priorizando y distribuyendo las tareas y resolviendo los problemas operativos pertinentes.
- Preparar y organizar la disposición del restaurante y del buffet, comprobando la disposición de las mesas.
- Mantener las pautas de desayuno, comida, cena y bar, siguiendo las normas de higiene y manipulación de alimentos y las directrices de Accor.
- Garantizar la maximización de las ventas y el control de inventarios para optimizar la rentabilidad.
- Participar y contribuir a la elaboración de los menús de comida y bebida.
- Garantizar la calidad de los productos y servicios en los puntos de venta.
- Recibir a los clientes y controlar el consumo, supervisando e incentivando las ventas.
- Buscar siempre nuevos proveedores para mejorar el coste de la mercancía vendida del restaurante.
- Capacitar al equipo día a día y asegurarse de que conocen el POP y las buenas prácticas de F&B.
- Supervisar el trabajo del almacén en materia de compras, calidad y recepción.
- Supervisar y cerrar las actividades realizadas en el restaurante para organizarlo para el turno siguiente.
- Participar en cierres mensuales y análisis de prime cost, margen bruto y curva ABC con el jefe inmediato.
- Emprender e innovar acciones para el restaurante de acuerdo con las características de la región y de la plaza hotelera.
- Proporcionar un ambiente que estimule a los clientes a consumir más y tener una experiencia memorable.
- Monitorear el funcionamiento de los equipos y materiales de su área de trabajo, manteniendo el lugar de trabajo limpio y organizado.
- Garantizar la seguridad física, patrimonial y alimentaria de los clientes, colaboradores y público en general dentro de las instalaciones del hotel bajo su responsabilidad.
- Apoyar la selección y el desarrollo de los colaboradores, conjuntamente con el Subgerente.
- Compartir con el equipo de Recepción preferencias del cliente para que el ACDC pueda ser actualizado con el fin de personalizar los productos y servicios para cada huésped y hacer que su experiencia sea sorprendente en cada estancia.
- Seguir las directrices de la dirección en materia de recogida selectiva y consumo de agua y energía para cumplir los objetivos medioambientales.
- Asegurar el cumplimiento de las metas del área: Informar, supervisar y monitorear el desempeño del equipo a su cargo, implementando acciones correctivas cuando sea necesario para garantizar el logro de los objetivos operacionales y estratégicos del área.
- Coordinar y verificar la participación del equipo en capacitaciones: Promover y asegurar la asistencia del personal a las instancias formativas definidas, monitoreando el avance y aplicabilidad de los contenidos en el desempeño diario.
- Apoyar la continuidad operacional colaborando con otras áreas: Gestionar recursos y coordinar apoyo entre equipos cuando se requiera, favoreciendo el trabajo colaborativo y la eficiencia transversal en la organización.
- Conocer y aplicar conceptos/prácticas sobre políticas compliance y LGPD (Ley General de Protección de Datos) Accor.
- Desempeñar otras funciones afines que requiera el área/hotel.
Minima : Cursando enseñanza superior en Administración de Empresas, Hotelería, Turismo o compatible -
Formación de Gastronomía y/o Servicio Buenas Prácticas de Manipulación de Alimentos
Deseable : Cursando enseñanza superior en áreas compatibles.
