Job Description

The Restaurant & Bar Service Manager oversees the day-to-day operations of the dining area and bar within our Marco's New York Italian Restaurant. This role requires a combination of hospitality, leadership, and business management skills. Here's an overview of the key responsibilities and skills associated with this position:

- Customer Service: Ensuring excellent customer service by maintaining high standards of hospitality, cleanliness, and efficiency. Handling customer inquiries, complaints, and special requests promptly and professionally to ensure customer satisfaction.

- Bar Management: Overseeing the bar area, including inventory management, ordering supplies, maintaining stock levels, and ensuring compliance with alcohol service laws and regulations. Developing and updating drink menus, training bartenders on cocktail recipes and techniques, and monitoring bartending standards.

- Dining Room Management: Managing the dining room layout, seating arrangements, and flow of service to optimize efficiency and customer satisfaction. Monitoring table turnover and reservations to maximize revenue and minimize wait times.

- Inventory Control: Managing inventory levels of food, beverages, and supplies to minimize waste and control costs. Conducting regular inventory counts, tracking usage and waste, and implementing strategies to reduce shrinkage.

- Financial Management: Developing and managing budgets for the restaurant and bar operations, monitoring expenses, and implementing cost-control measures to maximize profitability. Analyzing sales data and trends to identify opportunities for revenue growth.

- Menu Planning and Development: Collaborating with chefs and kitchen staff to create and update menus that reflect seasonal ingredients, customer preferences, and the restaurant's concept. Monitoring menu performance and making adjustments as needed to optimize sales and profitability.

- Staff Management: Hiring, training, scheduling, and supervising servers, bartenders, hosts, and other front-of-house staff. Ensuring that all employees understand their roles and responsibilities and providing ongoing support and guidance.

- Health and Safety Compliance: Ensuring compliance with health and safety regulations, including food safety standards, sanitation guidelines, and workplace safety laws. Conducting regular inspections and training staff on proper safety procedures.

- Leadership and Communication: Providing strong leadership and direction to the service team, fostering a positive work environment, and promoting effective communication and teamwork. Leading by example and demonstrating professionalism and integrity in all interactions.

Overall, the Restaurant & Bar Service Manager plays a critical role in ensuring the success of the front-of-house operations, including delivering exceptional customer experiences, driving revenue growth, and maintaining high standards of quality and service within Mercure London Bridge Hotel and Marco's New York Italian Restaurant.


Qualifications

  • 2+ years of leadership experience in a related position
  • Strong knowledge of operations
  • Advanced knowledge of the principles and practices within the food and beverage industry
  • Ability to adapt communication style to suit different audiences, such as effectively communicating with supervisors, coworkers, public, etc.
  • Excellent communication skills both verbal and written
  • Ability to train and develop leaders
  • Ability to budget and forecast
  • Extensive Food and Wine background
  • Excellent people skills
  • Ability to work with a diverse staff
  • Ability to coordinate special events
