Job Description

We are seeking an experienced Restaurant and Bar Manager to oversee the daily operations of our restaurant and bar at Fairmont Dallas. The ideal candidate will be responsible for ensuring exceptional service and guest satisfaction by maintaining high standards of hospitality. Key responsibilities include managing staff, ensuring compliance with policies and procedures, and maintaining cleanliness and organization of work areas.

In this role, you will anticipate guests’ needs, respond promptly, and ensure positive guest relations at all times. You will resolve guest complaints, provide accurate information about hotel services and local attractions, and ensure all service procedures are followed. Your ability to manage and train staff, prepare work schedules, and monitor performance is essential to maintain service excellence.

The Restaurant and Bar Manager will also be responsible for inventory and financial management, including establishing par levels for supplies, tracking revenue against budget, and managing payroll and tip distribution. You will oversee guest seating arrangements, handle waiting lines, and ensure timely delivery of orders while maintaining compliance with all health, safety, and liquor regulations.

Additionally, you will conduct pre-shift meetings, assign duties, and monitor staff performance to ensure adherence to standards. Your role will involve inspecting table setups, coordinating with the kitchen for daily specials, and ensuring the readiness of materials and equipment for service. You will also assist the staff during peak times, manage reservations, and handle P.O.S. system operations, including troubleshooting and issuing manual checks if necessary.

Qualifications

Qualifications:

  1. High school graduate or vocational training certificate.
  2. Minimum 18 years of age to serve alcoholic beverages.
  3. 1-2 years of experience as an Assistant Restaurant Manager/Supervisor, preferably in an upscale restaurant.
  4. Food handling certification.
  5. Knowledge of various food service styles (e.g., French service, Russian service, tableside flambé service, Butler style service).
  6. Fluency in English, both verbally and non-verbally.
  7. Ability to provide legible communication and direction.
  8. Competence in basic arithmetic.
  9. Familiarity with food and beverage cost controls.
  10. Ability to enforce hotel standards, prioritize and organize work, direct and motivate staff, identify training needs, and work without direct supervision. Proficiency in using P.O.S. systems and suggestive selling of menu items and beverages.

Desirable:

  1. College degree, preferably in Hospitality Management.
  2. Previous guest relations training.
  3. Previous culinary training.
  4. Certification in liquor, wine, and food service.
  5. Certification in CPR.
  6. Certification in an alcohol awareness program.

Physical Abilities:

Essential:

  1. Ability to transport up to 20 pounds at one time.
  2. Endure various physical movements throughout work areas.
  3. Reach up to 3 feet.
  4. Remain in a stationary position for 1-2 hours during work shifts.
  5. Satisfactorily communicate with guests, management, and co-workers
