Notre hôtel propose 430 chambres aérées au pied de la Dame de Fer. Offrant des vues sur le Trocadéro, le Pullman Paris Tour Eiffel est l'endroit idéal pour organiser un événement privé ou professionnel grâce à ses 23 espaces modulables, dont une salle de bal d'une capacité de 400 personnes. Il dispose aussi d'un bar-restaurant avec terrasse et d'une salle de fitness.
Notre futur(e) Responsable Hygiène & Stewarding aura pour mission d'assurer la gestion de l’entretien courant de l’ensemble du matériel d’exploitation utilisé en restauration (vaisselle, verrerie, petit matériel de cuisine). Il/Elle aura également en charge l’hygiène des cuisines, des accès des arrières et la gestion de son équipe.
Missions Stewarding :
- Recrutement et Management de l’équipe de l’équipe de Plonge (7 personnes)
- Gestion administrative de l'équipe plonge
- Mettre à disposition le matériel nécessaire aux cuisines et aux restaurants
- Contrôler la quantité et la qualité à la réception du matériel
- Vérifier l’état du matériel et s’assurer de sa réparation si besoin
- Assurer un suivi des équipements du service
- Etre en relation avec la sous-traitance F&B et nettoyage des cuisines
- Gérer les stocks matériel des magasins
- Réaliser des inventaires périodiques
- Contrôler et analyser les coûts d’exploitation du matériel
- Gérer les déchets internes de l’hôtel
- Assurer la qualité et le suivi de la cafétéria
- Assurer le sourcing et proposer du nouveau matériel au service F&B
- Animer les réunions hebdomadaires pour le stockage et l'achat de matériel du service F&B
Mission Hygiène :
- Garantir l’application des règles d’hygiène en vigueur : mise à jour du Plan Maitrise Sanitaire, audit interne, formation des équipes sur le terrain,
- Assurer l’entretien global des locaux d’exploitation
- Première expérience en hôtellerie souhaitée
- Niveau Bachelor ou Master
- Rigueur et organisation
- Capacité d’écoute et d’adaptation
- Sens de l’observation
- Connaître les normes en matière d'hygiène et de sécurité
- Savoir encadrer son équipe
- Autonomie
- Connaissance des techniques de nettoyage (machine à laver la vaisselle, plonge batterie, lave-verres) et produits chimiques
- Connaissance du système MICROS et Material Control (MC) souhaitée
Prise de poste : A partir d’octobre 2024.
