Estamos em busca de um(a) Nutricionista para integrar nossa equipe no Fairmont Rio de Janeiro Copacabana. Você será responsável por garantir a qualidade nutricional, sanitária e operacional dos serviços de alimentação, assegurando o cumprimento das normas vigentes, promovendo boas práticas de manipulação de alimentos e contribuindo para a excelência da experiência gastronômica oferecida aos nossos hóspedes e colaboradores.
ATIVIDADES:
- Planejar, acompanhar e supervisionar as atividades relacionadas à produção de alimentos, garantindo a qualidade e segurança alimentar;
- Assegurar o cumprimento das normas da Vigilância Sanitária, RDCs e demais legislações aplicáveis;
- Implantar, monitorar e atualizar os procedimentos de Boas Práticas de Manipulação de Alimentos;
- Realizar treinamentos periódicos com as equipes de Alimentos & Bebidas sobre segurança alimentar e higiene;
- Acompanhar auditorias internas e externas, elaborando planos de ação quando necessário;
- Controlar indicadores de qualidade, desperdícios e não conformidades, propondo melhorias contínuas;
- Acompanhar o armazenamento, recebimento e validade dos alimentos, garantindo as condições adequadas de conservação;
- Elaborar fichas técnicas e apoiar a padronização dos processos de produção;
- Atuar em conjunto com as equipes de Cozinha, Stewarding, Compras e Qualidade para garantir a excelência operacional;
- Prestar suporte na elaboração de cardápios, incluindo opções para restrições alimentares e dietas especiais;
- Promover uma cultura de segurança dos alimentos e qualidade em todas as operações de Alimentos & Bebidas.
- Ensino superior completo em Nutrição;
- Registro ativo no Conselho Regional de Nutricionistas (CRN);
- Experiência anterior como Nutricionista, preferencialmente em hotelaria, restaurantes, hospitais ou serviços de alimentação;
- Conhecimento das legislações sanitárias vigentes, APPCC e Boas Práticas de Manipulação de Alimentos;
- Experiência em auditorias de segurança alimentar será considerada um diferencial;
- Conhecimento do Pacote Office;
- Organização, senso analítico, proatividade e atenção aos detalhes;
- Boa comunicação e habilidade para ministrar treinamentos e atuar em equipe;
- Disponibilidade para atuar em escala, incluindo finais de semana e feriados, quando necessário.
