Preparar e montar pratos, cuidando dos padrões de apresentação e segurança alimentar exigidos, bem como auxiliar o superior imediato na manutenção dos controles da área.
PRINCIPAIS ATRIBUIÇÕES E RESPONSABILIDADES
Preparar os pratos do cardápio do dia, a partir das demandas recebidas, cozinhando, grelhando, assando os alimentos. • Montar pratos individuais, buffets, bandejas etc. e distribuir nos locais de consumo. • Sugerir alterações nos cardápios, baseando-se na disponibilidade de produtos e no histórico de consumo. • Monitorar o consumo e providenciar a reposição dos alimentos, quando necessário. • Executar as atividades dos diversos setores da cozinha, tais como: açougue, gardemanger, confeitaria, massas e outros. • Prestar informações e esclarecimentos aos clientes sobre os pratos servidos, quando solicitado. • Auxiliar o superior imediato na otimização dos recursos e controle de custos dos alimentos. • Aplicar os processos e procedimentos do “Auto Controle” da área. • Aplicar as boas práticas de segurança alimentar pertinentes à área. • Recolher os alimentos no final dos serviços e encaminhar ao destino apropriado. • Orientar e coordenar o Auxiliar de Cozinha e o II Cozinheiro em conjunto com o superior. • Executar outras atribuições correlatas de acordo com a necessidade da área.
FORMAÇÃO: Mínima Ensino médio completo/ Desejável Superior cursando em áreas afins.
CURSOS: Curso de boas práticas de segurança alimentar
