Job Description

We are seeking a detail-oriented and analytical Hygiene Manager to join our team at Swissotel Corniche Park Towers Doha. As a key member of our organization, you will be responsible for developing, implementing, and monitoring food safety and hygiene practices across all our food and beverage operations. This role is crucial in ensuring compliance with local and international food safety standards while maintaining the highest level of hygiene in our establishment.

  • Develop, implement, and maintain a comprehensive HACCP system in compliance with local and international food safety regulations.
  • Conduct regular risk assessments and hazard analyses for all food and beverage operations.
  • Monitor and verify Critical Control Points (CCPs) to ensure effective implementation and documentation of control measures.
  • Coordinate and perform internal food safety audits, inspections, and hygiene checks across all kitchen and F&B areas.
  • Lead investigations of food safety incidents, non-conformities, or guest complaints related to food hygiene, and implement corrective actions.
  • Train kitchen and F&B staff on HACCP principles, hygiene practices, and proper food handling procedures.
  • Maintain up-to-date documentation, including food safety logs, audit reports, and training records.
  • Liaise with local regulatory authorities to ensure compliance and readiness for audits or inspections.
  • Collaborate with the Executive Chef and F&B management to support menu development and operational efficiency with a focus on food safety.
  • Monitor supplier compliance with food safety standards and conduct regular supplier audits when required.
  • Enforce strict adherence to food safety, hygiene, and sanitation standards throughout the organization.
  • Work closely with kitchen and front-of-house management to ensure cohesive service and guest satisfaction.

Qualifications

  • Bachelor's degree in Food Science, Microbiology, Hospitality Management, or a related field
  • HACCP certification (Level 3 or 4 preferred)
  • Additional certifications in ISO 22000, FSSC, or Food Safety Management are advantageous
  • Minimum of 3-5 years of experience in a food safety or HACCP supervisory role, preferably within luxury hotels or high-end F&B establishments
  • Strong understanding of local food safety regulations in Qatar and international food safety standards
  • Proven leadership skills with experience in conducting training sessions and audits
  • Excellent communication skills in English (Arabic is a plus)
  • Strong attention to detail, organizational, and analytical skills
  • Ability to work collaboratively with various departments and stakeholders
  • Customer-focused mindset with a commitment to maintaining high standards of food safety and guest satisfaction
  • Physically able to stand for extended periods and lift up to 20kg (44lbs)
  • Proficiency in using relevant food safety management software and tools
