Job Description

What do we expect from you?

Mondrian Abu Dhabi is preparing for an exciting opening, and we are searching for a talented Executive Pastry Chef to lead our pastry division during the pre-opening phase. As the Executive Pastry Chef, you will be responsible for overseeing the creation and delivery of our pastry offerings, elevating the guest experience with imaginative and high-quality desserts, pastries, and baked goods. Your leadership will shape the culinary vision and ensure the success of our pastry operations from day one.

How your day looks like:

  • Lead the development and execution of innovative pastry concepts, ensuring they align with Mondrian’s creative and bold vision.
  • Oversee the daily operations of the pastry kitchen, ensuring consistent quality, presentation, and excellence in every product.
  • Manage inventory and control costs without compromising quality, ensuring that the pastry division operates efficiently and profitably.
  • Ensure the highest standards of hygiene and safety are maintained in the pastry kitchen, adhering to local and international regulations.
  • Foster a high-performance culture within the pastry team, providing training, mentorship, and motivation to inspire excellence and creativity.
  • Collaborate with the culinary team to integrate pastry offerings into the overall dining experience, creating unique and memorable guest moments.
  • Monitor guest feedback and incorporate it into the continuous improvement of the pastry offerings.
  • Drive sustainability within the pastry division, focusing on local sourcing, reducing waste, and implementing eco-friendly practices.
  • Ensure the timely preparation and delivery of all pastry items for hotel outlets, events, and special functions.

This role requires a dynamic leader with a passion for pastry arts, creativity, and operational excellence. You should be a culinary innovator who thrives in a fast-paced, high-pressure environment and can lead a talented team to deliver exceptional pastry experiences.


Qualifications

  • Minimum of 5 years of experience in Pastry Kitchen management, with at least 3 years in a Executive-level role, ideally in a luxury or lifestyle hotel environment.
  • Experience working in a truly global work environment is essential.
  • Prior pre-opening experience is highly preferred, with a strong understanding of the operational and logistical aspects involved.
  • Exceptional knowledge of pastry techniques, trends, and presentation, with a deep passion for creativity and innovation.
  • Expertise in luxury dining and innovative food and beverage concepts.
  • Strong customer orientation, emotional intelligence, and credibility, with a sense of commitment and accountability.
  • Exceptional stakeholder management skills.
  • Leadership skills that inspire and unify teams around common goals, striving for excellence in both quality and financial outcomes.
  • Strong financial management experience with the ability to control budgets and achieve cost efficiencies.
  • A deep passion for creating exceptional dining experiences and pushing the boundaries of culinary innovation.
  • Knowledge of food trends, sustainability initiatives, and industry best practices.
  • Knowledge of sustainability practices and current culinary trends.
  • Familiarity with kitchen management software and POS systems is a plus.
  • Creative thinking and the ability to embrace innovation while maintaining operational excellence.
