Company Description

We are looking for a Executive Chef to join the re-opening of the famed Delano Miami Beach.

Set to open its doors in 2025, Delano Miami Beach will fuse historic charm with contemporary luxury, reflecting a reimagined experience that pays homage to the original visionary concept. Comprising 170 rooms and distinct food and beverage concepts, the hotel will preserve its iconic walk-in pool and, in addition, unveil a new pool on an amenity deck, offering breathtaking views of the ocean. Delano Miami Beach will act as the brand’s flagship location, re-establishing Delano as a trailblazer in luxury lifestyle hospitality.  Ennismore, in partnership with Cain International (the owners of Delano Miami Beach as well as partner in the Delano brand), are currently undertaking a significant renovation and redevelopment of the iconic Delano hotel with an aim to open its doors again ahead of the 2025 winter high season.

The Executive Chef is the driving force behind all culinary consistency and advancement within the local market. You must have experience in multi-outlets or similar environment as well as a full understanding and passion to the latest food trends and competitors. The focus of the Executive Chef will be to keep the culinary team at the top of innovation while maintaining daily operations to meet financial goals.


Job Description

What you'll do... 

  • Maintain the quality of food products and ensure consistency in food delivery and standards. Ensure guest satisfaction score goals are achieved and/or exceeded.
  • Ensure the food product that is presented to guests is enhanced. Make changes that respond to the marketplace and to guests’ needs, both present and anticipated. Recommend changes to the food product. Use market research to develop new products.
  • Responsible for the financial management of the operation including controlling the elements that determine profit and loss, all major operating expenses, set margins and manage the business against projections. 
  • Budget development and ongoing budget management. Ensure that costs and inventory are controlled, and productivity and performance levels are attained.
  • Provide support of a specialist nature to the Executive Committee, particularly to the Director of Food & Beverage.  Work in support of team goals and measure effectiveness through the Food and Beverage profit and service performance of the hotel.
  • Select, train and develop all personnel within the department.  Able to exercise hire, discipline, personnel performance reviews and termination of employment discretion within Delano policies.
  • Give direction and leadership and be responsible for the implementation of plans.
  • Monitor effectiveness and introduce changes in response to the marketplace. Set targets, plan and schedule work and performance indicators that are typically productivity and efficiency measures.
  • Consult with all hotel departments and head office team members as needed.
  • Participate in long-range planning. Lead, support and make recommendations for ongoing hotel programs with continuous improvement in networking.
  • Ensure preparation of required reports, including (but not limited to) Wage Progress, payroll, revenue, team member schedules, quarterly actions plans.
  • Develop and implement departmental policies, health & safety, procedures, and other training programs.
  • Oversee divisional matters as they relate to federal, state and local employment and civil rights laws.

Qualifications

What we're looking for...

  • 5+ years of management experience in an accredited restaurant or hotel with multi-outlets
  • 3+ years in a public contact position, preferably in an upscale or lifestyle brand hotel
  • You have a deep passion and knowledge of the food and beverage techniques, trends, and technology - who has their finger on the pulse in Miami and beyond
  • Strong knowledge of health department rules and regulations, liquor laws and regulations
  • Enter and locate work-related information using computers and/or point of sale systems
  • Ability to multitask, work in a fast-paced environment and have a high-level attention to detail. You prioritize and adapt to the changing needs of the operation.
  • You’re a great communicator – both verbally and written – and a great listener. Fluent in English and Spanish strongly preferred.
  • You’re a strong team leader, a natural at managing and inspiring others in a way that gets the best out of them.
  • You have a passion for hospitality, you inspire an enthusiastic guest-centered approach.
  • You can turn any situation around into a positive experience for all, guests and team alike.
  • You think big and encourage your team to believe.
  • You are comfortable with the strategic as well as day to day detail.
