Job Description

Reporting to the Director of Food & Beverage, you will be responsible for overseeing the strategic direction, operational excellence, and financial success of all restaurant and bar outlets within the hotel. This role ensures adherence to service standards, luxury quality assurance (LQA) guidelines, and brand expectations, while creating an exceptional dining experience for guests. Key responsibilities include budget management, staff development, guest relations, and strategic planning to drive revenue growth and maximize profitability. Essential job functions include, but are not limited to, the following:            

  • Consistently offer professional, friendly, and engaging service.
  • Oversee day-to-day operations, ensuring all service standards and LQA guidelines are met.
  • Ensure seamless execution of all Food & Beverage promotions and new menus, creating a destination of choice for both hotel guests and external visitors.
  • Conduct regular inspections of restaurant and bar areas to maintain cleanliness, safety, and compliance with health regulations.
  • Work closely with the Director of Food & Beverage, General Managers, Restaurant Chef and Executive Chef to design innovative menus and wine lists while ensuring premium product quality.
  • Control labor and operating expenses through effective planning, budgeting, purchasing, policy-making, and inventory control.
  • Implement creative cost-control strategies and revenue-generating solutions to maximize profit.
  • Develop and maintain budgets based on forecasts, demand, occupancy, and historical data to drive year-over-year financial growth.
  • Lead short- and long-term capital projects to enhance guest and employee experiences, including restaurant redesigns or bar upgrades.
  • Be a visible presence in the operation, fostering relationships with regular guests and engaging with new patrons.
  • Oversee the guest experience to ensure service excellence and personalized hospitality.
  • Develop unique dining experiences through special events, customized menus, and premium service offerings.
  • Act as an ambassador of the Fairmont Château Laurier philosophy, ensuring all team members uphold brand values.
  • Collaborate with culinary and beverage teams to design innovative, seasonal, and high-quality menus.
  • Monitor food and beverage trends to keep offerings fresh and competitive while maintaining brand identity.
  • Lead recruitment efforts, ensuring a team of skilled, motivated professionals.
  • Provide continuous coaching, training, and professional development opportunities.
  • Develop and implement training programs focused on food & beverage knowledge, hospitality, and leadership skills.
  • Partner with marketing teams to create and execute promotional strategies that attract both hotel guests and local clientele.
  • Contribute to the hotel’s annual marketing plan and create synergy across all departments.
  • Communicate with all hotel departments to align on business fluctuations, special guests, and group bookings.
  • Champion sustainability initiatives, focusing on reducing waste, sourcing locally, and improving environmental impact.
  • Actively participate in corporate social responsibility programs, including Planet 21 and community engagement initiatives.

Qualifications

  • Minimum of 5 years of senior management experience in food and beverage operations, preferably in a luxury hotel or renowned restaurant setting.
  • Proven experience in budget management, cost control, and driving revenue growth in F&B departments.
  • Strong leadership skills with a track record of developing high-performing teams.
  • Exceptional interpersonal and communication skills, with the ability to build relationships with guests and employees.
  • In-depth knowledge of food and beverage trends, menu planning, and customer service standards.
  • University/College degree in Hospitality Management, Business Administration, or a related field preferred.
  • Experience in managing high-volume outlets and the ability to thrive in a fast-paced environment.
  • Fluency in English (additional languages are an asset).
  • Proficiency in Microsoft Office Suite and restaurant management software.
  • Passion for hospitality and commitment to delivering exceptional service.
