Le Fairmont La Marina Rabat Salé recrute un(e) Demi Chef de Partie Cuisine pour rejoindre son équipe.
Votre rôle :
Relevant du Chef du Partie, vous êtes chargé(e) des missions suivantes :
- Minimiser les pertes, respecter la meilleure utilisation des matières premières et du matériel ;
- Respecter et assurer le respect des normes en matière d’hygiène et de sécurité ;
- Appliquer et faire respecter les procédures de travail et les fiches techniques relatives à sa partie ;
- Remplacer les postes inférieurs au sein de sa partie si besoin ;
- Recevoir et contrôler l’arrivage des marchandises de son poste ;
- Vérifier les dates limites de consommation et la qualité des produits et marchandises de sa partie ;
- Contrôler le contenu, le rangement et la propreté des enceintes réfrigérées de sa partie et de la cuisine ;
- Aider au dressage des assiettes ;
- Contrôler et participer au nettoyage du matériel et équipement de sa partie et des cuisines ;
- Etablir les commandes en collaboration avec son Sous-chef ;
- Faire des listes de recommandations et des rapports précis par écrit, de sa partie la veille pour le lendemain ;
- Un diplôme ou un certificat dans une discipline culinaire
- Expérience préalable dans le domaine culinaire
- Connaissances aux normes HACCP
- Particulièrement responsable et fiable
- Capacité à travailler efficacement sous pression dans un environnement au rythme soutenu
- Capacité à travailler en équipe
- Capacité à concentrer son attention sur les besoins des clients, en restant calme et courtois à tout moment
