Relevant du Chef Pâtissier, les responsabilités et les fonctions essentielles du poste comprennent, sans s’y limiter :
- Préparer la production quotidienne de pains, petits pains, muffins et autres spécialités boulangères conformément aux recettes et fiches techniques préétablies ;
- Contrôler quotidiennement la mise en place pour assurer les normes de qualité et de fraîcheur ;
- Examiner les plannings de production afin de déterminer la variété et la quantité de produits à préparer ;
- Surveiller l’inventaire des fournitures et commander le stock en fonction des besoins journaliers et hebdomadaires ;
- Remplir les feuilles de production nécessaires à l’exploitation quotidienne
- Veiller à la propreté et à l’entretien de toutes les zones de travail, des ustensiles et des équipements ;
- Veiller à l’homogénéité de la qualité de tous les produits qui quittent la boulangerie ;
- Respecter les politiques, les procédures et les normes de service relatives aux cuisines ;
- Partager activement ses idées, ses opinions et ses suggestions lors des réunions préparatoires quotidiennes ;
- Communiquer quotidiennement avec les chefs des points de vente pour connaître les appréciations des clients ;
- Assurer la rotation correcte des produits dans toutes les chambres froides afin de réduire le gaspillage ;
- Participer activement à l’amélioration et la création de recettes après consultation du Chef Pâtissier
- Autres tâches, telles qu’assignées.
- Diplôme en Pâtisserie / Boulangerie
- Connaître l’organisation générale d’une boulangerie ;
- Maitriser les techniques culinaires liées à la boulangerie, la viennoiserie ;
- Compétences managériales : Savoir créer et maintenir un climat de motivation, et être un exemple pour son équipe
