Pullman & Mercure Brisbane King George Square is a large vibrant 438 room twin towered hotel which acts as a sanctuary for leisure and business travellers as well as a place to be with our external facing Venues. What you will be doing:
- Supervising, coordinating and participating in the preparation of mise en place cooking for F&B outlets in a timely manner.
- To consistently provide and maintain the highest standard of guest care and service.
- Ensuring all food produced is in line with departmental standards and kitchen recipes
- Working closely with senior chefs in composing new recipes and menu ideas.
- Working within a team environment
- To act on your responsibilities for Health and Safety at work.
- The ability to follow HACCP guidelines and municipality regulations at all times.
Your experience and skills include:
- Ability to work well under pressure in a fast paced environment
- Ability to work cohesively and collectively as part of a team
- A commercial cookery qualification with previous experience working in a hotel or restaurant environment for at least 3 years post-apprenticeship.
- Experience providing quality food and presentation of all dishes
- Knowledge of WHS and food safety policies and procedures
- Relevant food preparation and service knowledge
- The ability to work unsupervised with excellent time management skills
- Unlimited work rights in Australia
