Job Description

Responsible for the bakery section to create high quality bakery products and introduce new recipes.

Main Duties

  • Ensure the highest standards of hygiene are being followed in the bakery section.
  • Prepare duty schedules, recruit, manage and train bakery staff.
  • To monitor operating supplies, reduce spoilage and wastage.
  • To assist in carrying out quarterly, bi-yearly, yearly inventory of operating equipment.
  • Ensure that all food safety standards/HACCP are maintained and implemented in line with the company policy and municipality requirements.
  • Adherence to the Standard Operating Procedures Manual.
  • To carry out any reasonable duties and responsibilities as assigned.
  • Ability to handle multiple tasks as well as busy banqueting, outside catering & volume production with an eye to detail and presentation
  • Ensure all “quality ingredients’’ are professionally prepared in accordance with recipes, plating guides, with an emphasis on maximising productivity and minimizing waste, to support the Culinary Team achieve its  financial goals-targets.



  • Minimum of 2-3 years’ experience in a similar position, preferably in a 5 star hotel.
  • Ability to work well under pressure in a fast paced environment.
  • Well versed in all aspects of Food Hygiene, HACCP and OH&S to ensure safe working practices are followed within the kitchen.     
  • Strong communication, organisational skills and grooming standards.
