Job Description

Your Role in the Story 

As the Restaurant Manager of LUURA’s all-day dining restaurant, you will oversee all aspects of the outlet’s operations, ensuring every service, experience, and interaction reflects the high standards of RIKAS. You are responsible for delivering a seamless, elevated guest journey—from breakfast service in guest rooms to dinner and late-night offerings—combining operational excellence, consistency, and attention to detail. 

You will lead with a hands-on, visible presence on the floor, setting benchmarks for service, professionalism, and guest engagement. Your expertise will ensure smooth front-of-house and back-of-house coordination, drive team performance, support staff development, and deliver commercial results. You will uphold the restaurant’s distinct identity while embedding RIKAS operational standards, culture, and brand values throughout the team. 

Key Responsibilities 

  • Oversee all daily operations of the all-day dining restaurant, including breakfast, lunch, dinner, and room-service breakfast delivery, ensuring smooth service flow and operational efficiency. 
  • Uphold and communicate the restaurant’s philosophy and high standards, ensuring consistency in every aspect of service, presentation, and guest experience. 
  • Lead, inspire, and manage all restaurant staff, including hiring, onboarding, scheduling, training, performance evaluations, and ongoing development. 
  • Develop and maintain SOPs, operational manuals, and training materials tailored to all-day dining and in-room breakfast service. 
  • Conduct pre-shift line-ups, coaching, and training sessions to ensure staff deliver consistently high standards. 
  • Be present on the floor throughout service, actively coaching, monitoring guest interactions, and personally assisting with VIP or special requests. 
  • Handle guest feedback and complaints promptly and professionally, maintaining brand reputation and ensuring satisfaction. 
  • Collaborate closely with the F&B Manager, Front Office Manager, Chef, and other departments to ensure seamless coordination between kitchen, service, and support functions. 
  • Manage inventory, stock, and ordering processes for the restaurant, ensuring operational readiness and availability of ingredients, beverages, and in-room breakfast supplies. 
  • Monitor and control budgets, P&L, and operational costs while maintaining service quality and guest satisfaction. 
  • Ensure the restaurant’s ambiance, presentation, lighting, music, and decor reflect high standards and a welcoming, versatile all-day dining environment. 
  • Support the kitchen team during service when necessary to ensure smooth coordination and service flow. 
  • Plan and execute special events, seasonal menus, promotions, and unique guest experiences aligned with the restaurant’s concept. 
  • Analyze guest feedback, operational data, and market trends to drive continuous improvement, innovation, and elevated dining experiences. 
  • Utilize HR and operational systems for staff scheduling, performance tracking, payroll, and compliance reporting. 
  • Foster a motivated, professional, and culturally aligned team, ensuring high staff engagement, retention, and talent development. 
  • Lead by example, demonstrating professionalism, attention to detail, and dedication to excellent service standards. 
  • Adapt standards and ways of working in accordance with RIKAS brand direction and LUURA operational standards. 

Qualifications

Who We’re Looking For

  • Minimum of 5–7 years’ experience in hotel F&B or hotel operations, preferably within luxury or lifestyle hospitality environments.
  • Proven experience managing hotel-based restaurants, bars, and multiple F&B outlets within a hotel or resort setting.
  • Pre-opening experience in a hotel environment, ideally on a Greek island, will be considered a strong advantage.
  • Strong understanding of hotel operations, guest service standards, and luxury hospitality trends.
  • Demonstrated leadership, coaching, and team development skills, with the ability to motivate, engage, and retain talent in a hotel setting.
  • Experience with hotel budgeting, inventory management, and P&L oversight across multiple outlets.
  • Exceptional problem-solving and decision-making abilities, particularly in fast-paced, high-occupancy hotel environments.
  • Proficient in hotel operational systems, POS platforms, and workforce scheduling tools.
  • Fluent in English; additional languages are a plus.
  • Strong communication, interpersonal, and organizational skills, with the ability to collaborate across hotel departments.
  • In-depth knowledge of health, safety, and hygiene regulations applicable to hotel operations.
  • Eligible to work in an EU country.
  • High standards of personal presentation and professionalism.
  • Naturally warm, approachable, and guest-focused, leading by example on the hotel floor.
  • Hands-on, results-driven, and proactive in managing hotel F&B teams and outlets.
  • Committed to delivering exceptional, memorable guest experiences that reflect the hotel’s brand values.
  • Comfortable working in a fast-paced, people-first hotel environment, balancing operational demands with team development.
  • Passionate about hospitality, service excellence, and creating meaningful guest experiences.
