Le Novotel Paris Centre Tour Eiffel, idéalement situé face à la Seine, se trouve dans le quartier moderne et vivant de Paris Beaugrenelle.
Ses 764 chambres invitent nos clients à la détente, sans oublier notre piscine au toit ouvrant ou encore notre espace fitness. Nous nous distinguons également par notre restaurant gastronomique japonais « Le Benkay », notre bar, notre centre de convention de 3000 m² et notre restaurant rénové « Greem ».
Composé d’une clientèle internationale multi segments, notre équipe de près de 290 talents participe au succès de l’hôtel.
Avec une vue plongeante sur la Seine, le Benkay honore la gastronomie Japonaise avec art, dans une ambiance bois-wengé rappelant l’intérieur des maisons traditionnelles. On opte au choix pour le teppanyaki et sa cuisine sur plaque chauffante ou le washoku qui vous permettra de découvrir les mets traditionnels nippon dans une ambiance discrète et relaxante.

Missions :
Qualité
- S’assurer de la fraîcheur des produits ainsi que de la bonne qualité de préparation et de présentation des plats
- Veiller à la satisfaction clients
- Piloter l’élaboration des menus et cartes de la cuisine et est force de proposition
- Etre responsable d'un secteur de la cuisine et assurer l'organisation, la coordination et le service
- Etre mené à travailler sur les 2 espaces, washoku et teppanyaki.
Production culinaire
- Organiser et gérer l’ensemble du processus de production culinaire
- Assurer un service de haute qualité face aux clients
- Contrôler la bonne utilisation des équipements et des techniques traditionnelle washoku et teppanyaki
- Organiser les postes de travail
- Garantir la bonne application des normes d’hygiène et de sécurité dans la cuisine
Approvisionnement / Gestion des stocks
- Sélectionner et garantir la qualité des produits utilisés
- Gérer l’ensemble des dépenses liées au bon fonctionnement de la cuisine
- Gérer les coûts nourriture et suivre les ratios en accord avec le chef de cuisine
Profil :
- Bonne connaissance de la culture japonaise
- Une expérience en cuisine gastronomique ou établissement haut de gamme
Langues : Français et Anglais, langue Japonaise est un plus
