Rôle:
Assiste le Chef Exécutif dans la production, la préparation et la présentation de tous les plats pour garantir une qualité alimentaire optimale en tout temps.
Contribue au maintien de systèmes de contrôle alimentaire efficaces en déterminant les menus, les besoins en achats, en définissant les spécifications de qualité, en surveillant les produits alimentaires lors de leur réception, de leur stockage et de leur distribution.
Aide le Chef Exécutif à proposer des menus et des buffets de manière créative et orientée vers le marché.
Participe à l'élaboration et à la mise en œuvre de normes, de recettes, de tailles de portions et de calculs de coûts.
Forme le personnel de service sur les différents plats du menu ou du buffet.
Sous la direction du Chef Exécutif, participe à la réalisation de sessions de formation en cours d'emploi pour les employés de cuisine.
Assure le bon stockage de toutes les matières premières et des produits alimentaires, et s'assure qu'aucun produit gâté n'est conservé.
Contrôle et goûte tous les buffets, présentations et installations de banquets conformément aux spécifications du Chef Exécutif et prend des mesures immédiates en cas de divergences.
Pendant les heures de pointe, c'est-à-dire le déjeuner et le dîner, le Chef Sous-Exécutif doit être posté dans la cuisine principale ou au buffet pour s'assurer que la nourriture est servie conformément aux spécifications du Chef Exécutif.
