Job Description

Position Overview

We are seeking an experienced and highly skilled Senior Chef de Partie to join our dynamic Sushi Kitchen team. The ideal candidate will have a passion for Japanese cuisine, particularly sushi, and a strong background in kitchen operations. As a Senior Chef de Partie, you will play a key role in ensuring the highest standards of food preparation, presentation, and service.

·  Prepare and present high-quality sushi dishes, including nigiri, sashimi, maki, and specialty rolls, ensuring consistency and excellence in taste and presentation.

·  Assist in the creation and development of new sushi menu items, keeping up with current trends and customer preferences.

·  Maintain strict standards of hygiene, safety, and sanitation in the kitchen, ensuring all dishes meet our quality standards.

·  Mentor and train junior kitchen staff, ensuring they are proficient in sushi preparation techniques and kitchen procedures.

·  Monitor and manage inventory levels of sushi ingredients, including fish, rice, and other perishables, ensuring freshness and minimizing waste.

·  Oversee daily kitchen operations, coordinating with other kitchen staff to ensure timely and efficient service during busy periods.

·  Occasionally interact with guests, providing information about sushi dishes and accommodating special requests and dietary restrictions.

·  Work closely with other chefs and kitchen staff to maintain a cohesive and productive work environment.


Qualifications

·  Minimum of 3-5 years of experience in a sushi kitchen, with at least 1 year in a supervisory or senior role.

·  Proficiency in sushi preparation techniques, including knife skills, fish filleting, and rice preparation.

·  Strong creative skills for developing innovative sushi dishes and presentations.

·  Demonstrated leadership abilities, with experience in training and supervising kitchen staff.

·  High attention to detail and commitment to maintaining quality standards.

·  Excellent communication skills, both verbal and written.

·  Formal culinary training or certification in Japanese cuisine is a plus.
