Job Description

We are seeking an exceptional Senior Breakfast Chef to join the pre-opening culinary team of Delano London. Reporting to the Executive Head Chef and working closely with the Senior Sous Chef ,you’ll take ownership of the breakfast operation and weekend brunch, helping to create a memorable and consistently excellent start to every guest’s day. You’ll lead by example, build a strong breakfast team and deliver food that combines precision, generosity, freshness and genuine hospitality.

What you’ll do…

  • Take day-to-day ownership of the breakfast operation and weekend brunch, ensuring excellent preparation, organisation, service delivery and guest satisfaction.
  • Lead the breakfast kitchen team, setting clear expectations and maintaining a calm, professional and supportive working environment.
  • Work closely with the Executive Head Chef and Senior Sous Chef to develop and deliver a breakfast and brunch experience aligned with the Delano and Lana Lusa concepts.
  • Oversee the preparation and service of a high-quality breakfast offering, including eggs, hot breakfast dishes, bakery and pastry items, cereals, fruits, healthy options, juices and other menu requirements.
  • Deliver an elevated weekend brunch experience with strong attention to food quality, presentation, timing, variety and consistency.
  • Ensure all breakfast and brunch dishes are prepared, cooked and presented to the required Delano standard, following recipes, specifications, portion controls and plating guidelines.
  • Take ownership of daily breakfast mise en place, production lists, par levels, prep schedules and section readiness.
  • Coordinate effectively with Front of House, Restaurant Management, Pastry, Stewarding and other hotel departments to ensure smooth and timely service.
  • Maintain strong communication with the service team regarding availability, wait times, special requests, VIP guests, dietary requirements and menu changes.
  • Ensure the breakfast kitchen is fully prepared before service and that all stations remain organised, clean and adequately stocked throughout operation.
  • Coach, train and develop Chef de Parties, Demi Chefs, Commis Chefs and other team members working within the breakfast operation.
  • Support recruitment, onboarding and training for the opening breakfast team, helping to establish strong standards and a positive culture from day one.
  • Create and maintain breakfast and brunch SOPs, recipes, prep lists, cleaning schedules, opening and closing procedures and service standards.
  • Monitor food quality, freshness, temperature, presentation, consistency and speed of service throughout breakfast and brunch.
  • Ensure excellent control of eggs, proteins, bakery, fresh produce, garnishes, sauces, condiments and all other breakfast components.
  • Support stock control, ordering, deliveries, storage, labelling, rotation, waste reduction and responsible use of ingredients.
  • Work with the culinary leadership team to maintain food cost, portion control, yield, labour productivity and waste targets.
  • Monitor buffet presentation and replenishment where applicable, ensuring that food is fresh, attractive, correctly labelled and maintained at safe temperatures.
  • Ensure full compliance with food safety, HACCP, allergen management, Health & Safety, company policies and all relevant legal and brand requirements.
  • Manage guest requests and dietary requirements with care, professionalism and clear communication.
  • Support menu tastings, recipe development, breakfast activations, weekend brunch launches, mock services and other pre-opening activities.
  • Be flexible across the wider culinary operation and support other sections when business needs require it, while maintaining responsibility for breakfast and brunch.

Qualifications

What we’re looking for…

  • You have strong breakfast and brunch experience at Senior Chef de Partie, Junior Sous Chef, Sous Chef or Senior Breakfast Chef level within a high-quality restaurant, luxury hotel or premium hospitality operation.
  • You have a genuine passion for breakfast cookery, eggs, fresh produce, bakery, healthy dishes, classic favourites and contemporary brunch.
  • Previous luxury hotel or high-volume breakfast experience would be a real advantage.
  • Previous pre-opening experience would be a real plus - you enjoy building something from the ground up and understand the importance of preparation, systems and consistency.
  • You are a confident, hands-on chef who enjoys leading a team and being present throughout service.
  • You have excellent knowledge of breakfast production, cooking techniques, presentation, kitchen organisation and service delivery.
  • You are comfortable managing early starts, busy breakfast services, weekend brunch and changing guest volumes.
  • You are confident with egg cookery, hot breakfast, buffet operations, fresh produce, sauces, garnishes and dietary adaptations.
  • You are a natural team player who communicates clearly, supports colleagues and creates a positive working environment.
  • You enjoy coaching and developing junior chefs, sharing knowledge and helping others perform at their best.
  • You understand the importance of food safety, HACCP, allergens, temperature control, cleanliness and disciplined kitchen routines.
  • You have awareness of portion control, food cost, waste reduction, ordering and the commercial realities of a busy breakfast operation.
  • You are organised, reliable and able to prioritise effectively while maintaining attention to detail.
  • You remain calm under pressure, adaptable when plans change and willing to take ownership of problems and solutions.
  • You are passionate about hospitality and understand that breakfast is an important part of the overall guest experience.
  • You are flexible to work early mornings, weekends, public holidays and the key moments that hospitality demands.
