Job Description

The Restaurant Manager is responsible for assisting the Food & Beverage Manager/Director in fulfilling the objectives of implementing the Pullman brand standards, improving guest satisfaction, increasing departmental revenue, minimizing unnecessary expenses, developing the productivity of the Outlet Manager, and overseeing the daily operations of banquets, restaurants, and bars.

1st Primary Responsibilities

  • Supervises the overall functioning of F&B restaurant outlets, including employees, guest concerns, brand standard audits, facilities, sales, and costs, to ensure maximum departmental profit is achieved.
  • Continuously controls and analyzes the following areas to optimize performance:
    • Product and service quality
    • Guest satisfaction
    • Operating costs
    • Sanitation and cleanliness (HACCP/FSMS)
  • Coordinates and oversees the preparation, presentation, and service of restaurant products to ensure the highest quality at all times.
  • Ensures all food served is closely monitored and governed by restaurant and food safety measures, adhering to the highest hygiene standards.

2nd primary responsibilities

  • Supervises and coordinates pricing and preparation of menus and food lists by taking into consideration such factors as:
  • Establish a yearly restaurant events, special menus, buffet theme and restaurant promotions plan with the DOFB.
  • Cascade down the quarterly restaurant food & beverage promotion plan to entire team.
    • Market needs
    • Competition & Market trends
    • Availability of Beverage products in the market
  • Coordinates with the Cost Controller to determine the minimum and maximum restaurant inventory and related restaurant consolidated reports on daily or monthly basis.

3rd primary responsibilities

 

  • Assist the Food & Beverage Manager/ Director to conduct weekly operation meetings relating to, but not limited to, the following:
    • Overall financial results and profitability.
    • Projected business for restaurants & bars.
    • Operations results and problems.
    • Changes in procedures (P&P/ SOP).
    • New management policies.
    • Quality improvement.
    • Sales improvement.
    • Productivity improvement.
  • Attends all other meetings as required by the administrative calendar from the F&B Manager / Director.

Qualifications

Knowledge and Experience

  • Minimum of 5 years of restaurant outlet management experience, preferably in a luxury setting, lifestyle bar, or standalone urban bar concept.
  • Strong understanding of operational controls, budgeting, sales, and marketing.
  • Excellent oral and written communication skills.
  • Proven ability to train and develop team members.
  • Ability to work effectively in a team environment and take initiative.
  • Exceptional organizational skills.
