RESPONSABLE DE PRODUCTION CUISINE F/H/X

Le MERCURE PARIS NANTERRE**** recherche activement un Responsable de restauration F/H, en CDI à temps plein, à partir du 1er août 2024.
L’hôtel, entièrement rénové en mars 2024, dispose de 85 chambres, 1 restaurant et bar, 6 salles de réunion à la lumière du jour et avec terrasse extérieure. Le restaurant de l’hôtel « La Vinothèque » propose une cuisine d'inspiration traditionnelle à base de produits frais et de saison. La salle de restaurant a une capacité de 80 places.
Situé au pied de la station RER A Nanterre Ville et à côté du nouveau centre commercial du Chemin de l'Ile, le MERCURE PARIS NANTERRE**** se situe dans un quartier en effervescence.
En tant que responsable de production cuisine, vos missions seront les suivantes :
- Assurer et coordonner l'organisation, la préparation, la production, la mise en valeur et la qualité des prestations culinaires
- Garantir le respect des normes en matière d'hygiène et de sécurité des personnes.
- Anticiper les besoins en aliments, les coûts et approvisionnement en conséquence
- Participer aux inventaires : vous faites du gaspillage votre meilleur ennemi ! En gardant un œil ouvert sur la consommation du restaurant, vous optimisez vos résultats et mettez en place les actions correctives de demain
- Animer et coordonner votre équipe composée de 3 personnes en développant le potentiel de chaque collaborateur.
- Vous avez une expérience de + de 2 ans en tant que chef de partie
- Passionné(e) de cuisine vous aimez innover et suivre les tendances culinaires
- Vous avez déjà encadré une équipe. Votre capacité à fédérer une équipe et votre sens capacité d’analyse sont vos atouts majeurs sur le poste
- La gestion du temps et des équipes en cuisine, ça vous connait. Vous savez diriger, déléguer et répartir les tâches.
- Vous êtes force de proposition
- Vous avez une excellente présentation.
- Salaire : 2500€ mensuel brut + 10% bonus annuel sur les résultats de l’établissement
