O que você irá fazer:
• Montar pratos individuais, buffets, bandejas etc., e distribuir nos locais de consumo.
• Sugerir alterações nos cardápios, baseando-se na disponibilidade de produtos e no histórico
de consumo.
• Executar as atividades de diversos setores da cozinha, tais como: açougue, garde-manger,
confeitaria, massas e outros.
• Coordenar junto ao pessoal do turno da tarde/noite a preparação de todo o material e
produtos para o café da manhã. Verificar taxa de ocupação, porcionar e manter
devidamente embalados os alimentos, de modo a garantir a agilidade no preparo em
quantidades suficientes.
• Monitorar o consumo do buffet e providenciar a reposição dos alimentos, quando
necessário.
• Supervisionar pessoalmente os buffets montados no café da manhã, almoço ou jantar e
garantir uma ótima qualidade e apresentação.
• Auxiliar na otimização dos recursos e controle de custos dos alimentos e aplicar os
procedimentos do Autocontrole da área.
