Job Description

Providing Inspired Food & Beverage to highlight the destination we represent is one of our passions.  As our Makana Market & In-Suite Dining Manager, you will be responsible for curating a superior guest experience through effective leadership, planning and directing of all activities while delivering top line revenue, colleague engagement, guest satisfaction and fiscal results.

Salary Range:  $76,000-$82,000

What you will be doing:

  • Oversee all aspects of Makana Market and In-Suite Dining operations.
  • Provide an active presence during peak business hours
  • Keep up with current trends in retail merchandising, Café coffee culture and in-room luxury dining and experiences
  • Target areas that will allow Makana Market and In-Suite Dining to achieve exceptional guest satisfaction results
  • Evaluate areas with opportunities for revenue growth through implementation of new retail sets, menus and amenity options that cater to our guests needs and anticipate their wants
  • Manage labor and operating expenses through effective scheduling, budgeting, purchasing, and Forecasting
  • Compile month end financial recap of Makana Market and In Suite Dining to include actual results versus forecast/budget/previous year and submission of analysis
  • Ensure all brand standards and programs are in place and maintained.
  • Have full knowledge of all menu items, garnishes, contents and preparation methods for all food and beverage venues on property
  • Collaborate with other departments at the Kea Lani to contribute to the overall smooth operation of the hotel
  • Drive revenue and profit through the implementation of strategies, practices, and promotions
  • Develop and implement branded logo related application, product, and merchandising standards
  • Conduct monthly and Quarterly Inventory counts for both venues
  • Recruit, motivate, coach, and discipline Makana Market and In Suite Dining colleagues
  • Lead Front of House team in all aspects of the venues’ culture to ensure service & hospitality standards are followed
  • Train, evaluate and promote the growth and development of internal talent
  • Complete one-on-one meetings and performance reviews in accordance with company guidelines
  • Maintain the safety and sanitation of the restaurant in adherence to local Health Department, and EHC safety guidelines
  • Maintain atmosphere of aloha spirit by providing engaging, personalized, timely, and efficient service to our discerning guests, remaining calm and courteous at all times
  • Create and maintain department specific policies, procedures and service standards. Follow hotel and departmental policies, procedures and service standards that are already in place
  • Contribute to the improvement of the operation by contributing ideas, making suggestions, soliciting feedback  and actively participating in departmental communication meetings

Qualifications

Your experience and skills include: 

  • Must be able to effectively communicate both verbally and written, with all level of colleagues in an attentive, friendly, courteous and service oriented manner
  • Must be able to speak, read, write and understand the English language
  • Requires good communication skills, both verbal and written
  • Must be able to read and write to facilitate the communication process
  • Must be service oriented and capable of communicating effectively with persons involved in all levels of authority, both internally and externally
  • Must possess basic computational ability
  • Must possess computer skills, including, but not limited to, Microsoft Word, Excel, and e-mail functions

Education

  • High School diploma or equivalent or vocational training

Experience

  • Minimum of two years management experience in Food & Beverage operations or Retail Operations required
  • Experience in Silverware system is an asset

Licenses or Certificates          

  • TB Clearance
  • Maui County Liquor Card
  • Food Safety Certification or ServSafe Certification
