Job Description

Are you passionate about maintaining the highest standards of cleanliness and hygiene in a world-class kitchen? The Pullman & Mercure Melbourne Albert Park Hotel is seeking an organized, detail-oriented, and proactive Chief Steward to oversee the sanitation area of our kitchens and contribute to the smooth operation of our dining experience for our whole hotel community.

About the Role! 

Reporting to the Executive Chef, this newly established role will be responsible for: 

  • Managing and coordinating the daily stewarding operation including supervising of the stewarding team. 
  • Liaise with the Executive Chef and Department Heads to ensure that equipment requirements are met and fully operational.
  • Supervise, train and develop kitchen staff, fostering a collaborative, inclusive and high-energy working environment. 
  • Oversee and uphold hygiene standards in our kitchen/ stewarding operations, including banquets, à la carte restaurants and staff canteen. 
  • Manage inventory, order supplies and minimise waste to optimise the Food & Beverage efficiency.
  • Facilitate and promote a collaborative interdepartmental work environment throughout the hotel. 

Qualifications

About You!

  • Previous experience with working with a large fast-paced stewarding operation.
  • Strong knowledge of Food Safety and hygiene standards (HACCP). 
  • Strong ability to effectively interact and communicate with staff, management and vendors. 
  • Proven ability to design and manage efficient staffing schedules, optimising team performance.
  • Demonstrated experience in efficiently managing stock levels and overseeing invoicing processes.
