Scheduled to complete the changes in Spring 2024, the hotel will provide an all-encompassing experience of entertainment, leisure, dining, conferencing and unparalleled hospitality.


Job Description

As Head Sommelier, you are responsible for all things wine. Supporting wine and beverage list development and maintenance. You must prioritise wine sales and revenue, while maintaining high standards of wine service throughout the venue. You should be constantly improving your own knowledge of wine and mentoring and training all those around you. Development of a wine / beverage culture and being able to train on all things wine is a must. Recruitment of a like-minded wine team also comes under your responsibility. LinkedIn and responding to Recruitment drives are part of your role. The venue needs to be known for wine and social media posts and wine events should be a regular occurrence. Reporting to the Head of Beverage, you will work alongside the other Level’s Head Sommelier to drive the wine program.

As our Head Sommelier, you will be responsible for:

  • Developing, launching and constantly curating  a leading wine program that is aligned to the venue concepts. 
  • Hosting guests during service and elevating their experience. 
  • Showing exceptional guest relationship skills and instilling these throughout the wine and bar teams. 
  • Developing; communicating; implementing and monitoring venue SOPs, SOS, and professional standards. 
  • Coordinating and managing the dynamic of the wine team; including recruitment, onboarding and team development in line with Sofitel and House Made Hospitality values. 
  • Being an industry leader for product knowledge and bar and beverage thought leadership. 
  • Implementing strategies to achieve beverage revenue targets.
  • Acting as an impeccable ambassador for the Sofitel bar and beverage program. 

Qualifications

 

  • At least 5-7 years experience as a Sommelier in a restaurant environment.

  • At least 5-7 years experience in a CBD/corporate environment.

  • Excellent ability to manage a team.

  • Experience in writing and delivering training and development.

  • Expert understanding of wine, spirits and cocktails. 

  • Ability to understand and manage COGS.

  • Deep understanding of supplier contracts.

  • Intricate knowledge of BOH and FOH venue operations.

  • Full Australian Work Rights.
