Job Description

KEY RESPONSIBILITIES:

  • Coordinate and direct all food preparation, from prep through service
  • Monitor and ensure that all food is of a high quality  
  • Track, record, control and maintain inventory stock including foods, beverages, and kitchen supplies and costs
  • Delegate daily tasks to Executive Sous Chef and other kitchen staff; manage their progress throughout the day
  • Control labour, inventory and payroll costs
  • Oversee entire kitchen staff activity and ensure efficient work
  • Direct, design and plating/presentation techniques for all dishes
  • Assist with menu engineering
  • Create and design overall menu, including specials each week
  • Assist with menu engineering and pricing for menu items
  • In support with the Talent & Culture Department, hire and train new kitchen staff
  • Work efficiently to resolve any challenges that arise in the kitchen
  • Research and implement new culinary trends
  • Maintain a clean kitchen and abide by all national food safety and sanitation laws inclusive of HACPP regulations
  • Vast knowledge in culinary arts, including any new up and coming food trends
  • Comply with all corporate Food and Beverage requirements
  • Ensure high levels of team engagement
  • Utilise TrustYou surveys to enhance guest experience
  • Work closely with the Food and Beverage team to ensure the seamless delivery of service
  • Knowledgeable of and ability to use all manner of complex kitchen equipment
  • Be a role model for the team in providing warm, friendly and engaging service.
  • Any other related duties as requested by the General Manager.

 


Qualifications

  • University/College degree in Culinary Arts or a related discipline required
  • 10 years’ experience working as Executive Chef required
  • ServSafe and HACPP Certification
  • 5 years’ Experience in a Forbes 5 star and AAA 4 Diamond hotel or resort required 
  • Computer literacy in Microsoft Window applications required
  • Financial Background - Comprehends budgets, operating statements and payroll progress reports as needed to assist in the financial management of department.

  • Experience working in a 4/ 5 star Hotel
  • Effective communication skills
  • Ability to work cohesively as part of a team
  • Service focused personality is essential
  • Must be energetic and able to lift and pull items 15 - 20 pounds.
  • Must be able to effectively handle competing demands via prioritising.
  • Ability to stand for lengthy periods
  • Experience in a LQA, Forbes 5 star and AAA 4 Diamond hotel or resort required 
  • Must be legally able to work in Barbados
