Job Description

Reporting to the Culinary Leadership Team, responsibilities and essential job functions include but are not limited to the following:
• Consistently offer professional, friendly and proactive guest service while supporting fellow Colleagues
• Prepare, bake, assemble and present a wide variety of pastry, dessert and bakery items according to hotel recipes and standards
• Organize and prepare mise en place for daily pastry operations, including à la carte service, banquet production, afternoon tea, amenities and other hotel outlets
• Ensure the consistency, quality and presentation of all pastry items produced
• Maintain cleanliness and proper maintenance of all work areas, utensils and equipment
• Have full knowledge of all pastry menu items, daily features and promotions
• Follow kitchen policies, procedures and service standards
• Ensure all food items are handled, stored and labeled properly in accordance with food safety and sanitation standards
• Assist with production planning and support the team in meeting operational needs during both regular and high-volume periods
• Support the training and development of junior colleagues when required
• Follow all safety and sanitation policies when handling food and beverage
• Other duties as assigned


Qualifications

• Previous experience in a professional pastry or culinary environment
• Previous luxury hotel or high-volume pastry kitchen experience an asset
• Journeyman’s papers or international equivalent an asset
• Diploma/Certification in Pastry Arts or a Culinary discipline an asset
• Strong interpersonal and problem solving abilities
• Strong organizational skills and attention to detail
• Ability to work well under pressure in a fast-paced environment
• Ability to work cohesively as part of a team
• Ability to focus attention on guest needs, remaining calm and courteous at all times
• Good knowledge of pastry techniques, baking methods, chocolate work, plated desserts and dessert presentation
• Ability to prepare all required mise en place for different areas of the pastry kitchen
• Ensure quality standards and safety standards are met consistently
• Flexible and able to work a variety of shifts, including early mornings, evenings, weekends and holidays, based on operational needs


Additional Information

Physical Aspects of Position (include but are not limited to): 

  • • Constant standing and walking throughout shift
    • Frequent lifting and carrying up to 30 lbs
    • Occasional kneeling, pushing, pulling
