About Orient Express Venezia
Orient Express will open its second hotel in Italy at the exceptional in Venice. Architect and interior designer Aline Amar d’Amman, alongside her studio Culture in Architecture, has been entrusted to design and decorate the space.
Venice, once the gateway to Constantinople and a mythical stop on the legendary Orient Express train – that opened its doors in 1919 with the completion of the Simplon tunnel linking Switzerland to Italy – will be the home of the second Orient Express hotel, set to open in 2026.
Il Commis de Cuisine svolge un ruolo fondamentale all’interno del nostro team di Cucina, supportando la preparazione e la presentazione di una proposta gastronomica d’eccellenza in linea con gli standard dell’hotel in termini di qualità, eleganza e precisione.
Riportando allo Chef de Partie e al Sous Chef, il Commis de Cuisine contribuisce a offrire un’esperienza culinaria raffinata e memorabile, nel rispetto dei valori di artigianalità, coerenza e centralità dell’Ospite che contraddistinguono il nostro servizio di lusso a cinque stelle.
Responsabilità principali
- Supporta la preparazione, la cottura e la presentazione dei piatti nelle diverse sezioni della cucina sotto la supervisione degli Chef senior.
- Assicura che la mise en place sia preparata, organizzata e mantenuta secondo i più alti standard qualitativi, garantendo la piena operatività del servizio.
- Segue le ricette, il controllo delle porzioni e le specifiche di presentazione stabilite dalla direzione culinaria.
- Rispetta rigorosamente le procedure di igiene, sicurezza e sanificazione in conformità alle linee guida HACCP e ai protocolli di sicurezza alimentare dell’hotel.
- Mantiene pulite e ordinate le postazioni di lavoro e le attrezzature di cucina per tutta la durata del turno.
- Collabora con i colleghi di cucina per garantire operazioni fluide ed efficienti durante le fasi di preparazione e servizio.
- Partecipa a briefing periodici, sessioni di formazione e degustazioni per accrescere le proprie competenze e la conoscenza dei prodotti.
- Supporta la ricezione, il controllo e il corretto stoccaggio delle forniture, nel rispetto degli standard dell’hotel e delle normative di sicurezza alimentare.
- Comunica tempestivamente allo Chef de Partie o al Sous Chef eventuali carenze di prodotto, problemi alle attrezzature o altre criticità.
- Contribuisce attivamente alla riduzione degli sprechi alimentari attraverso corrette pratiche di conservazione, rotazione e utilizzo delle materie prime.
- Rispetta gli standard di cura personale e di immagine, incarnando costantemente la professionalità richiesta in un contesto di hotellerie di lusso.
- Dimostra passione per l’arte culinaria, desiderio di apprendere e forte impegno nel garantire l’eccellenza in ogni piatto.
- Supporta il team di cucina nella preparazione di eventi, banchetti ed esperienze gastronomiche speciali, quando necessario.
- Conosce e rispetta le procedure dell’hotel in materia di emergenza, salute e sicurezza, contribuendo a mantenere un ambiente di lavoro sicuro.
- Adotta un comportamento rispettoso e orientato al lavoro di squadra, favorendo un clima di lavoro positivo e inclusivo.
- Diploma o certificazione culinaria conseguita presso un istituto alberghiero o una scuola di cucina riconosciuta.
- Precedente esperienza in una cucina professionale, preferibilmente in contesti di hotellerie di lusso o fine dining.
- Solida conoscenza delle tecniche di base di cucina, della preparazione degli alimenti e delle operazioni di cucina.
- Buona conoscenza degli standard di igiene in cucina e delle normative sulla sicurezza alimentare (HACCP).
- Elevata attenzione ai dettagli, alla pulizia e alla qualità nella preparazione e presentazione dei piatti.
- Attitudine proattiva, desiderio di apprendere, adattarsi e crescere all’interno del team di cucina.
- Disponibilità a lavorare su turni flessibili, inclusi serali, fine settimana e festività, secondo le esigenze operative.
- Spiccato spirito di squadra, con ottime capacità comunicative e relazionali.
- Fluente conoscenza della lingua italiana; una conoscenza di base dell’inglese è preferibile, ulteriori lingue costituiscono un plus.
- Diritto legale a lavorare in Italia.
