Our prestigious hotel is centrally located in Cairns City, offering 324 elegantly appointed rooms, 18 versatile meeting spaces, and Coco’s Kitchen and Bar, where the menu highlights local fish, seafood, and premium regional produce. Bring your culinary creativity to our kitchen team and help craft memorable dining experiences for every guest.
We are looking for an experienced Chef de Partie with a strong a la carte background to join our vibrant kitchen team. In this role, you will create high-quality dishes, contribute to menu development, and manage kitchen operations. You will also mentor junior staff, ensuring food safety standards and efficient kitchen performance in a fast-paced, high-standard environment.
Key Responsibilities:
- Prepare high-quality dishes across various kitchen sections, with a strong focus on a la carte, buffet, larder, mise-en-place, room service, and banquets.
- Ensure food safety, cleanliness, and organisation in the kitchen.
- Contribute to the development of new menu items to enhance the guest dining experience.
- Mentor and supervise junior staff, offering guidance and training.
- Apply diverse cooking styles and techniques to deliver exceptional dishes.
- Foster strong communication and coordination within the kitchen brigade.

Key Requirements:
- Trade qualifications and previous experience in the hotel industry preferred.
- Extensive experience in a la carte

- Flexible and able to embrace and respond effectively to change.
