Chef de Partie - Commissary

Job Description

The Chef de Partie – Commissary manages the Commissary kitchen, ensuring the preparation and production of high-quality and innovative dishes. They collaborate closely with the Junior Sous Chef – Commissary to maintain the highest culinary standards, uphold food safety regulations, and deliver a diverse range of exquisite culinary offerings. With a keen eye for detail and creativity, the Chef de Partie - Commissary contributes to menu development, implements culinary techniques, and supervises a team of commissary cooks.


  1. Education: A formal culinary education from a reputable culinary institute or equivalent qualification is essential. 
  2. Experience: Proven experience as a Demi Chef de Partie or similar role in a luxury hotel or high-end restaurant setting. 
  3. Expertise in Commissary Operations: Specialized knowledge and experience in managing commissary operations, including batch cooking and large-scale production. 
  4. Culinary Skills: Proficiency in various culinary techniques, menu planning, and execution of exquisite dishes with precision and creativity. 
  5. Food Safety Certification: Possession of relevant food safety certifications and a strong adherence to hygiene and safety standards. 
  6. Leadership Abilities: Strong leadership and team management skills to guide and motivate the commissary kitchen team effectively. 
  7. Adaptability: Ability to thrive in a fast-paced environment, adapt to changing circumstances, and consistently deliver under pressure while upholding the hotel's culinary standards.
