Job Description

Chef de Cuisine – Mad Cow Wine and Grill

Chef de Cuisine is responsible for leading the day-to-day operations of our brand new re-imagined Mad Cow Wine and Grill and related areas. 

  • Create a vibrant MAD COW experience
  • Design, create, and update a diverse and authentic menu that reflects the hotels commitment to culinary excellence.
  • Ability to work with Director of Food and Beverage and drive average check and overall revenue for Mad Cow
  • Drive guests experience by being guests centric and meeting and greeting every guests at the table, recommending and highlighting speciallity and what's uniquely available in the kitchen or secretly kept only to delight a special occasion 
  • Lead and inspire the kitchen brigade, ensuring a collaborative and positive work environment.
  • Supervise and train kitchen team members in proper cooking techniques and adherence to standardized recipes.
  • Maintain high standards of food quality, presentation, and flavor consistency.
  • Conduct regular food tastings and inspections to ensure all dishes meet the hotel's standards.
  • Oversee day-to-day kitchen operations, including food preparation, cooking, and plating.
  • Manage inventory, control food costs, and minimize waste.
  • Recruit, train, and develop culinary heartist, fostering a culture of continuous learning and improvement.
  • Implement and enforce kitchen hygiene and safety protocols.
  • Collaborate with other departments, such as Food and Beverage, to create seamless and exceptional guest experiences.

Qualifications

Minimum 4 years of experience as a chef de cuisine or sous chef in a upscale steak restaurant in a luxury or upscale/premium hotel,

A diploma or certificate in a culinary discipline,
Excellent interpersonal and problem-solving skills,
Mastery of HACCP hygiene standards
Particularly responsible and reliable,
Ability to work effectively under pressure in a fast-paced environment,
Ability to work in a team,
Ability to focus attention on customer needs, remaining calm and courteous at all times,
Knowledge of Microsoft Windows applications an asset, knowledge in futurelog and other kitchen system is an added advantage.

On the 27th floor we offer an innovative two in one concept of Cantonese cuisine and Mad Cow - Wine and Grill a signature Pullman steak restaurant.

Our 28th floor we offer a roof top bar and a pool and guests can enjoy sunset together with a stunning view of Trang Anh.
