- Diriger le personnel de cuisine et coordonner les commandes d’ingrédients
- Superviser la préparation et la cuisson des aliments
- Vérifier la présentation et la température des plats
- Définir la taille des portions
- Établir les plannings du personnel de cuisine
- Fixer les prix des plats en collaboration avec le manager du restaurant
- Commander les ingrédients et équipements de cuisine selon les besoins
- Former le personnel de cuisine à la préparation des aliments et aux techniques de service
- Stocker les produits alimentaires conformément aux pratiques de sécurité (au réfrigérateur par exemple)
- Tenir des registres hebdomadaires et mensuels des coûts
- Maintenir les normes d’hygiène et de sécurité dans la cuisine
- Expérience pratique de la préparation de menus et de la commande d’ingrédients
- Connaissance d’une large variété de recettes
- Connaissance des réglementations en matière d’hygiène et de sécurité en cuisine
- Excellent sens de l’organisation
- Capacité de gestion des conflits
- Capacité à diriger une équipe dans un environnement rapide
- Flexibilité pour travailler les soirs et weekends
- Un diplôme d’une école culinaire ou un diplôme de gestion de restaurant serait un plus
