Responder pela gestão das atividades da Cozinha, criando e coordenando a execução de receitas e pratos e ações, garantindo a alta gastronomia com qualidade e higiene, contribuindo com a imagem da marca e o aumento da rentabilidade do hotel e controlando seus custos. Planejar, administrar e coordenar as atividades da área, definindo diretrizes e rotinas de trabalho, orientando, priorizando e distribuindo tarefas e solucionando os problemas operacionais pertinentes. Contribuir para o bem-estar do cliente interno / externo, fortalecendo os produtos e serviços.
Elaborar os cardápios de todos os pontos de venda, planejando os itens de composição, com base na demanda recebida considerando equilíbrio nutricional e propriedades que compõem os alimentos.
Criar novos produtos/serviços (cardápios temáticos, montagem, apresentação dos alimentos etc.) de acordo com as tendências do mercado, alta gastronomia e conceitos da marca, gerando diferenciais e potencializando a imagem da marca junto à mídia.
Elaborar fichas técnicas (quantidade, modo de preparo, ingredientes etc.) a fim de garantir a padronização e apurar o custo total de cada prato.
Administrar estoque, consumo e custo, assegurando os níveis, de acordo com as demandas, bem como acompanhar os inventários.
Supervisionar a preparação dos pratos, de forma a garantir os padrões de qualidade e apresentação requeridos.
Desenvolver novos fornecedores e novas tecnologias para área, visitando-os, conhecendo seus produtos e instalações, efetuando cotações e efetivando a contratação.
Representar a gastronomia do hotel, perante a mídia e entidades de classes, bem como cultivar e zelar pela imagem da marca, junto ao mercado, comunidade, associações e demais entidades representativas locais.
