Job Description

Assistant Chief Steward

  • In collaboration with Executive Chief Steward to manage the stewarding team in order to ensure a clean and safe working environment for F&B team.
  • Responsible for ordering all the kitchen cleaning supplies.
  • Control the inventory of all equipment, crockery, cutlery, and glassware and maintain the inventory par stock.
  • To ensure all areas of responsibility are organized and maintained according to sanitary guidelines.
  • To ensure proper use of cleaning products and chemicals in a continuous effort to keep costs to a minimum.
  • Train stewarding team on all aspects of chemical handling, operating the dish washing machine and cleaning of kitchens and all kitchen equipment.
  • To ensure recycling and garbage disposal along with HACCP practices are followed at all times.
  • To ensure cleaning schedules are followed and completed.
  • To supervise and coordinate activities of the pantry, storeroom and non cooking kitchen employees.
  • To liaise closely with the outlet colleagues with regards to their needs for operating equipment and its placement.
  • To monitor all stewarding operations, especially during peak business periods, assisting and adjusting where necessary.
  • Ensure water temperature and chemicals level are appropriate for cleaning and properly documented.

Qualifications

  • Previous leadership experience in a stewarding department required.
  • Knowledge of different use of chemical.
  • Food & safety and HACCP certification is preferred.
  • Computer literate in MS. Office applications.
