We are opening Melbourne's newest rooftop destination; Cleo

Opening this December, Cleo will bring Eastern Mediterranean flavours and old-world cooking techniques to life, set within a new modern space to celebrate every season

The rooftop of Hyde Melbourne Place will be transformed with warm tones, long tables, generous spaces for relaxed communal dining and an all-new Mediterranean-inspired food and beverage menu.

We are on the lookout for an experienced and passionate Assistant Bar Manager to support our bar operations, inspire the team, and deliver exceptional guest experiences that keep people coming back for more.


Job Description

Key Responsibilities

  • Support the Bar Manager in day-to-day operations
  • Leading and motivating the bar team to deliver exceptional service
  • Overseeing bar set-up, pack-down, and smooth service during peak trade
  • Assisting with rostering, stock control and ordering
  • Maintaining compliance with RSA and licensing requirements
  • Jumping in behind the bar to mix, shake and serve when the rush hits

Qualifications

What you bring:

  • Previous experience in a senior bartender or supervisor role
  • Strong knowledge of cocktails, wine, and spirits
  • Natural leadership skills and the ability to inspire a team
  • High energy, attention to detail, and a guest-first mindset
  • Flexibility to work evenings and weekends
  • Current RSA certification
