At Parker’s, wine is part of the story, not a performance. This role blends leadership, presence, and passion for wine to create evenings that feel intimate, indulgent, and deeply human.
The Restaurant Manager is both service leader and cellar storyteller. You support daily front-of-house operations while elevating Parker’s wine experience through confidence, curiosity, and genuine connection.
You are a visible leader in the room, guiding service flow, engaging guests in tableside moments, and inspiring the team through presence rather than pressure. Your energy helps define Parker’s evening identity: refined but relaxed, thoughtful yet inviting.

Contract Type: Full-Time
Pay Rate: $55,000 to $62,000 per year, dependent on experience
Reports to: Restaurant General Manager
Key Responsibilities
Service Leadership & Operations
- Support daily front-of-house operations across all services, ensuring smooth flow and consistent execution.
- Step confidently into leadership of the dining room when required, guiding the team through service with clarity and warmth.
- Assist with scheduling, shift leadership, and pacing to maintain an intimate, unhurried guest experience.
- Uphold Parker’s emotional tone: grounded, welcoming, and authentic.
Wine Experience & Storytelling
- Act as a steward of the wine cellar and interactive wine moments.
- Lead wine service with approachability and intention, guiding guests without intimidation.
- Create engaging tableside wine rituals that invite conversation and curiosity.
- Support wine-focused staff training, including pairing philosophy, storytelling, and service confidence.
- Maintain cellar organization, inventory control, and cost awareness.
Team Development & Collaboration
- Build trust and engagement through inclusive leadership and open communication.
- Inspire and motivate the team by enrolling buy-in rather than directing through authority.
- Partner closely with culinary leadership to align wine, food, and service storytelling.
- Lead by example, modeling polished execution, professionalism, and guest-first decision-making.
What You Bring
• Strong foundational wine knowledge with a genuine curiosity to deepen expertise.
• Experience in chef-driven, food-first dining environments.
• Confidence engaging guests and guiding wine conversations with ease and warmth.
• A collaborative leadership style and respect for culinary craft.
• High attention to detail and pride in thoughtful execution.
• A belief that wine should invite connection, not dominate the table.
• ProServe certificaiton required.
Bonus If You Bring
• Formal wine education (WSET or equivalent).
• Experience leading wine programs or cellar operations.
• A natural mentoring mindset with a passion for developing others.
• Previous luxury hotel or destination restaurant experience.

Physical Demands
• Continuous standing and walking throughout service periods.
• Frequent bending, reaching, and lifting up to 11lbs (5kg); occasional lifting up to 22lbs (10kg).
• Ability to work in a dynamic dining environment with varied pacing and guest interaction.
Visa Requirements: Must be legally authorized to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
