Rattaché au Directeur F&B, le Manager Point de Vente est responsable de la gestion quotidienne de ce restaurant . Il incarne l’hospitalité marocaine et garantit un service d’exception dans le respect de l’identité culinaire du lieu. Il assure la coordination des équipes, la satisfaction client et l’atteinte des objectifs qualitatifs et financiers du point de vente.
PRINCIPALES RESPONSABILITÉS
Opérationnel
Garantir une expérience client authentique et mémorable, alignée avec l’esprit .
Superviser et organiser les services.
S'assurer de la mise en place et de la propreté de la salle selon les standards LQA et les normes Accor / Fairmont.
Veiller à la bonne coordination entre la salle et la cuisine pour fluidifier le service.
Être présent en salle pour encadrer l’équipe, accueillir les clients VIP et gérer les situations délicates.
Gestion d'équipe
Recruter, intégrer, former et encadrer l'équipe de service.
Planifier les horaires et gérer les présences.
Motiver et développer les compétences des collaborateurs.
Mener des briefings quotidiens.
Qualité & Satisfaction client
Répondre rapidement aux réclamations et s'assurer du suivi.
Analyser les retours clients (TrustYou, LQA, audits internes) et proposer des plans d'action.
Performance & Gestion
Veiller au respect des objectifs de chiffre d’affaires et de rentabilité.
Suivre les indicateurs de performance : PDR, upselling, taux de satisfaction, food cost.
Optimiser les ventes via des initiatives commerciales : soirées à thème, partenariats, événements privés.
Contrôler les stocks, les commandes et les inventaires.
Expérience réussie (minimum 3 ans) en tant que Manager F&B ou Assistant Manager dans un hôtel de luxe ou un restaurant haut de gamme.
Excellente présentation et sens du service client.
Bonne connaissance des arts de la table et des vins .
Maîtrise du français, de l’arabe et de l’anglais.
Leadership naturel, esprit d’équipe et diplomatie.
Sens de l’organisation, rigueur et réactivité.
