La mission du Chef Steward est d’assurer le bon fonctionnement du service stewarding : nettoyage / plonges, gestion de la vaisselle (porcelaine, couverts, etc.), gestion des produits d’entretien.
Ses principales missions sont :
- Encadrer et former le personnel stewarding ;
- Gérer la réserve du matériel de la restauration ;
- Identifier, en collaboration avec les managers point de vente, les besoins en matériel et les réassorts pour la salle et la cuisine ;
- Superviser le bon entretien et la bonne utilisation du matériel mis à sa disposition ;
- Gérer le stock de produits d’entretien ;
- Superviser le nettoyage de la vaisselle, du petit matériel cuisine et des cuisines ;
- Etre garant du comportement et de l’hygiène du personnel dont il a la charge ;
- Etablir les plannings de ses équipes ;
- Contrôler la propreté des sols de la cuisine et des locaux communs ;
- Contrôler la bonne gestion des déchets du département F&B (stockage et enlèvement) ;
- Renseigner la fiche de perte et de casse quotidiennement ;
- Superviser et valider les inventaires mensuels des arts de la table et petit matériel de cuisine.
- Assurer un bon fonctionnement de l’équipe avec une atmosphère de confiance / synergie ;
- Informer sa hiérarchie de tout problème technique ou humain ;
- Assurer un rôle de relais dans la transmission des informations ascendantes ou descendantes ;
- Travailler en harmonie avec les autres services du Fairmont la Marina.
FORMATION / EXPERIENCE
- BAC pro en Hôtellerie-Restauration ;
- 5 ans d’expérience dans un établissement de renom et 2 ans dans un poste similaire.
CONNAISSANCES / SAVOIR-FAIRE
- Maitrise du français écrit et oral, l’anglais est un plus ;
- Connaitre et maitriser les HACCP ;
- Connaître l’organisation du département F&B et Cuisine ;
- Maîtriser les supports informatiques Office Word et Excel ;
- Connaître la dénomination du matériel de la cuisine et de la vaisselle.
