Job Description

MAJOR DUTIES AND RESPONSIBILITIES

  • To ensure LQA standards are followed at all times
  • To ensure the restaurant (tables and service stations)  is accurately set up ahead of service with any additional equipment necessary for the shift ready and on hand to avoid interruption to the service flow
  • To maintain complete knowledge of table/seat/station numbers room capacity, hours of operation, proper table set up and dress code of the restaurant.
  • To ensure the restaurant is accurately set up following the reservations book, noting all necessary seating requests, menu requests and any necessary special information
  • Review daily specials or not available items and maintain awareness throughout the shift.
  • To follow the sequence of service set out in the SOP’s
  • To take guest’s food orders, utilizing upselling techniques and record orders, following service standards.
  • To know ingredients and recipes for the outlets menus, a la carte, set and buffet and to be able to advise guests on recommendations taking into account any dietary needs
  • To be able to recommend and describe special cocktails.
  • To perform guest satisfaction checks on all tables, making polite conversation with the guests and ascertaining if any additional items are required.
  • Direct and work closely with the waiters and runners in assigned station on service timing, additional table wares for courses and items to serve.
  • To provide fast, efficient and friendly service at all times.
  • To communicate complaints or comments to a supervising staff.
  • Not to leave the respective station assigned during operation hours, unless necessary and to inform a senior member of staff should you have to do so for any reason.
  • Not to consume any food or drink in the kitchen or restaurant areas, or remove any food or drink for consumption elsewhere.
  • To respect the guests presence when interacting with colleagues and act in an unobtrusive manner
  • To make sure that all food service areas are clean and look tidy at all times.
  • To be able to make a table reservation (in person as well as on the phone) ensuring guest name, contact number (or room number) requested time of booking and number of guests are correctly noted as well as any special requests.
  • To ensure the restaurant and pantry areas are kept as clean as possible, removing litter and cleaning the restaurant as per the restaurant cleaning schedule. 
  • To ensure that all equipment (including linen) is well maintained and used only for the correct purpose.
  • To requisition all necessary supplies and transport them from storeroom to restaurant ensuring that expenses are controlled and the par stock is being followed
  • To help ensure that at closing time all equipment is returned to the proper locations, all lights, fans and music systems are turned off. All doors and cupboards are closed (and locked where necessary) and that the stations are left clean and tidy.
  • To maintain the highest standard of personal hygiene and appearance in line with the company grooming policy and procedures.
  • To co‑operate fully with his/her colleagues and work as a team at all times.
  • To ensure all guest bills are thoroughly checked before being presented and to ensure payment is adequately received before the guest leaves the outlet.
  • To offer sincere thanks to guests when they depart from the restaurant.
  • To be well informed on the hotel's services & facilities as well as general tourist information.
  • To monitor any fire, health and hygiene hazards, and report them to a supervisor at once.
  • To hand in lost property to the Housekeeping Office as soon as it is found.
  • To attend all skills training sessions as required and make a continuous effort to increase his/her knowledge of his/her profession, and to improve his/her skills.
  • To carry out all other reasonable duties as and when requested by a senior colleague
  • To protect the environment in every way possible.
  • To follow and obey all hotel regulations.

Qualifications

  • Ability to speak English.
  • Attentiveness and patience for customers
  • Active listening and effective communication skills
  • Flexibility to work in shifts
  • High school diploma; food safety training is a plus
